Meat muffins

Mix the minced meat with the listed spices, mustard, ketchup, soy sauce, chopped onion, chopped red peppers, eggs, breadcrumbs and grated potatoes. Place in muffin tins and bake at about 240 degrees for about 1 hour.

I put them next to the cut potatoes as for french fries, put them on baking paper, sprinkled with olive oil and salt, I put the tray of potatoes on another stage of the oven after about 20 minutes, so they made with meat muffins. They came out fff good.

Cocoa muffins with LCHF chocolate icing

Some time ago I bought online carbohydrate-free flour, a mixture of fibers to replace wheat flour in pastries. At first I didn't really know what to do with this flour, and the recipe on the bag was a fiasco. But I continued to experiment and found other proportions that pleased me. The recipe for low-carb muffins I'm already doing it for the third time and I really like the result, and not just me. The secret of the proportions lies in the use of the same container for the measurement. In my case it is a standard spoon with a capacity of 15 ml. The dry ingredients are taken without a tip, and the excess is removed with the blade of a knife.
If you do not use icing, you have a dairy-free LCHF preparation.

You can find the flour here. Although the price may seem a bit high, using it is quite economical. For example, if you use it only for these muffins, a package will last you for about 10 rounds.

  • 4 eggs, separated
  • 1 pinch of salt
  • 4 tablespoons sweetener powder
  • 4 tablespoons coconut oil
  • 4 tablespoons flour mix of carbohydrates without carbohydrates
  • 2 tablespoons cocoa
  • 1 tablespoon psyllium bran
  • ½ teaspoon baking powder
  • 50 g dark chocolate without sugar
  • 1 tablespoon sweet cream
  • 10 g butter
  • almond flakes for decoration, optional

Preheat the oven to 180 degrees C.
Beat the egg whites with the salt powder and the sweetener until they foam hard. Add the yolks one by one, then the oil, beating continuously.
In a bowl, mix the carbohydrate-free flour with cocoa, psyllium, baking powder. Gradually incorporate into the egg composition.
Pour the dough with a spoon into muffin tins, or it can be made as a whole cake top.
Bake for about 25-30 minutes, until when pressed with the finger, the surface recovers immediately.

For the icing, melt the chocolate, sweet cream and butter over low heat. Grease each muffin (cooled) with icing and sprinkle with almond flakes.

(About 20 pieces)

  • Sugar powder - 220 g
  • Butter 82% - 220 g
  • Eggs (XL) - 4 pcs
  • Yogurt cream - 40 ml
  • Flour - 220 g
  • Vanilla b0urbon - 1 sachet
  • Cinnamon - ½ teaspoon
  • Nutmeg - ½ teaspoon
  • Salt - a powder
  • Baking powder - ½ teaspoon
  • Chocolate coins / flakes - 100 g
  • Almond flakes / hazelnuts / walnuts - 50 g
  • Candied cranberries or other candied fruit - 50 g
  • Cream cheese - 300 g
  • Powdered sugar - 150 g
  • Grated lime peel - according to preference
  • Grated orange peel - according to preferences
  • Butter 82% - 300 g
  • Fruits for decoration (you can use blackberries, raspberries, blueberries, red currants, strawberries, grapes.)

All ingredients must be at room temperature!

Mix with a spatula, powdered sugar with butter at room temperature until you get a homogeneous composition.

Add eggs and mix until you have a homogeneous composition, then add yogurt cream.

Mix the baking powder, vanilla bourbon and salt with flour, add over the obtained composition and continue mixing until we have a uniform composition, then add the chocolate balls, mix a little, fill the muffin tins with a posh and put them in the preheated oven at 170 ̊̊̊C, 15-20 minutes until golden brown.

After they are ready, let them cool before decorating them with cream, because if we put the cream on the warm muffins, we risk the cream melting!


Using a spatula, mix the cream cheese with the powdered sugar, incorporate lightly. after the sugar has been mixed with the cream cheese, add the butter at room temperature together with the orange peel and lime, mix until you get a homogeneous cream.

Cover the bowl and refrigerate for 20 minutes!

We put over the muffins with a posh, then decorate with fruits and various decorative ornaments!

1 turkey breast
2 eggs
150 g of cheddar cheese or cheese
30 g of flour
75 ml of milk
30 g of soft butter
salt - to taste

Boil the turkey breast. Let it cool. Meanwhile, grate the cheese, beat the eggs and mix them with the cheese and butter, add the flour and gradually the milk, stirring gently, until the composition is homogeneous and acquires the consistency of fat cream. Finely chop the boiled turkey breast and incorporate it into the composition. Pour the composition into muffin tins. Put the muffins in the oven at a temperature of 210 degrees Celsius for 15-20 minutes, until golden. The mini turkey muffins can be served hot or cold. Good appetite!
