  • baking soda & # 8211 1 1/2 teaspoon
  • salt & # 8211 1/4 teaspoon
  • eggs & # 8211 2 pieces
  • whipped milk & # 8211 625 ml
  • rapeseed oil & # 8211 2 tbsp and 2 tsp
  • blueberries (fresh or frozen) & # 8211 125 gr.

Mix the flour, baking powder, baking soda and salt in a bowl. In another, smaller bowl, beat the eggs with the whipped milk and the 2 tablespoons of oil until smooth. Pour the liquid composition over the dry one and mix gently, then incorporate the blueberries.

Heat a non-stick pan over medium heat and grease with 2 teaspoons of oil. Wipe off excess oil with a paper towel. Pour the dough into the pan about 70 ml. Fry the pancakes until they brown on the bottom and make blisters on the surface. Then they return and repeat the operation on the other side.

2. Chia pudding and strawberry (or other fruit)

ingredients for 4 glasses of pudding:

  • 8 tablespoons full of chia seeds
  • 600 ml of milk & # 8211 according to preferences and beliefs
  • 2 oranges

For the pudding: put 2 tablespoons full of chia seeds in 4 glasses, mix them with 150 ml of milk and leave them in the fridge overnight to soften. After 15 and 30 minutes, respectively, mix them to avoid the formation of lumps.

For topping: peel the oranges and cut them into small pieces. In a blender, put them together with the milk and strawberries until the mixture becomes liquid. Spread the mixture over the pudding.

At the end, decorate with half-cut cottage cheese. Serve immediately.

3. Crumble what you have in the kitchen

I think I will open the series "Oat Brotherhood", because for a while oats are the new wheat for me. But the idea is that this crumble is the dessert that is neither pie nor porridge and that is great and warm, with a cold yogurt next to it. And, especially, which is easy to make, with what ingredients you have around the house. I did them with the following:

  • 1 cup oatmeal
  • 1 cup almond flakes
  • 1 cup coconut oil
  • 1 cup hydrated raisins
  • cinnamon powder
  • 6 apples peeled and cut into cubes (can also be pears or quince).

Method of preparation: mix oatmeal, almonds and coconut oil with the bark powder in a bowl. Separately, the hydrated raisins are mixed with the apple pieces.

Place the apple mixture with the raisins in the glass bowl for the oven, after greasing the glass bowl with coconut oil. Pour the oat composition over the mixture and level it slightly.

Leave in the oven set at 190 degrees for about 30 minutes. It is consumed hot or cold, plain or something. We chose yogurt and so the girls ate a delicious snack.

MILK CAKE - dietary dessert with top without baking

The cake we present to you is completely unique, as it is not only very elegant, but also very tasty. The surprise element are the layers with jelly, obtained from milk, as well as the top prepared without flour, sugar or eggs.

It is a countertop inspired by raw-vegan cuisine, which is obtained from dried fruits, mixed in the robot.

The result is a very good dessert, but it does not add many calories to our diet. It can also be prepared during fasting, for a special event, in which case a vegetable milk (almond, oats, soy, etc.) will be used.

At the same time, a vegetable gelatin will be used, which is called agar-agar and which we find in health food stores. Use as directed on the package.

Milk jelly cake & # 8211 recipe

• 1 liter of milk
• 300 g of nuts
• 200 g of dates
• 100 g of prunes (or whole dates)
• 150 g of coconut
• 3 tablespoons of cocoa
• 250 g of raw sugar
• vanilla essence
• 3 sachets of gelatin

Grind 150 g of walnut kernels through the S-blade robot, as well as dates and prunes. If you don't have a food processor, you can use a meat grinder.

Add 1 tablespoon of cocoa and 1 tablespoon of coconut. Stir until you get a sticky dough.

Transfer the composition to a removable form (cake ring) and press firmly with your fingers, and then with the back of a glass. Or you can use a high-walled dish, pre-lined with parchment paper (including on the walls).

Put the form in the fridge while you make the cream.

Bring 500 ml of milk to a boil. Add 100 g of sugar, cocoa and vanilla.

Chop the remaining 150 g of walnuts and add it over the milk, when it starts to boil. Stir and cook for 5-10 minutes.

Add 1 ½ sachets of gelatin and stir for 5-10 minutes to dissolve.

Pour the composition over the counter and put the dish in the fridge. Wait a few hours (2-3 hours) until it hardens.

After the gelatin layer has coagulated with cocoa, prepare the second layer.

Put the rest of the milk (500 ml) on the fire in a bowl, together with 150 g of sugar and a little vanilla. When it starts to boil, add the coconut and turn off the heat.

After 10 minutes, add 1 ½ sachets of gelatin and mix well. Pour the composition over the first layer of gelatin in the form and leave the cake in the fridge for another 2-3 hours, to set well.

When you are ready to serve the cake, unfold the ring on a plate. If you used a fixed-walled bowl, place a plate over the mouth of the bowl and turn the cake over, then turn it over on a plate to leave the white layer on top.

You can decorate the cake with coconut to give it a more elegant and seasonal look.

The dough for clafoutis is prepared simply, in the same way as the dough for American pancakes. If I caught your attention, follow below the list of ingredients and steps needed to prepare a delicious seasonal dessert for your loved ones.

Ingredient:

  • 4 medium eggs
  • 100 gr sugar
  • 125 gr flour
  • 250 ml milk
  • 300 gr cherries
  • a pinch of salt
  • 1 vanilla bean, or 2 teaspoons of essence
  • 20 gr butter
  • vanilla flavored powdered sugar
  • a cube of butter to grease the baking form.

Method of preparation

Start by melting the butter in a small pan, then leave it to cool. Turn on the oven at 180 degrees Celsius.

Break the eggs in a bowl, sprinkle a little salt over them and mix until smooth. Add the sugar and continue mixing at the maximum level until you get a frothy composition. You know you got this foamy composition when the volume doubles.

Add the vanilla pod, or essence, then the milk and melted butter and mix well. At the end, add the flour and mix the composition again.

Line the inside walls of a baking tin with a capacity of 1-1.5 liters with butter and sprinkle with sugar. In this way, the cake comes off more easily after baking.

Sprinkle the cherries at the base of the baking tin, after you have removed the seeds, then spread the clafoutis dough over them.

Bake the delicious clafoutis with cherries for 30-35 minutes, at 180 degrees, or until nicely browned on the surface.

Measure all ingredients with the same cup.

• ¾ cup of coconut oil
• ¾ cup of cocoa powder (or carob)
• 2/3 cup of honey
• ½ cup of peanut butter
• 1 teaspoon of vanilla essence
• a pinch of salt

Put the coconut oil in a heat-resistant bowl and put it in the microwave for a few seconds to melt and become liquid. Or you can melt it on a bain-marie.

Add the honey and stir with a whisk until dissolved. Stir in peanut butter, cocoa powder, vanilla and salt. Stir to mix.

At this point you can add other additional ingredients, such as crushed walnut or hazelnut kernels, raisins, cranberries, goji, dried currants or other such fruits.

Pour the resulting composition into a small square or rectangular tray / shape in which you spread baking paper or plastic wrap long and wide. This will make it easier to remove the chocolate from the mold.

Put the composition in the refrigerator for 1-2 hours, until it becomes solid and can be portioned.

Cut the chocolate into smaller squares or cubes. It is recommended to keep it in the refrigerator. It does not spoil, as it does not contain dairy, but can melt due to coconut oil which becomes liquid at room temperature (during the summer).

Have you been to Starbucks Lately? If you have - or even if not - let me supplement their latest hot drinks. It happens to be two and both are made without dairy. One is made with almond milk and honey, and the other is Starbucks Latte with vegan coconut milk . And this is the Starbucks copied recipe that I share with you today.

Now don't get me wrong: I love Starbucks and I often go shopping at the mall. But when you're at home, that's a different story. My husband used to think I was crazy and I wanted to run out of my favorite Starbucks drink, hot or cold. It didn't even matter the weather. Just a note, Starbucks uses a sugar called cascara / It is a rare sugar that actually comes from a coffee bean. It's hard to find anywhere, so after tasting it, I found that coconut or turbinado / demerara sugar tastes very similar and is the perfect substitute.
