Spinach pizza

Spinach pizza

Dissolve the yeast together with the salt and sugar in a little warm water. Sift the flour into a bowl, make a hole and put the mixture together with the olive oil. Mix and add a little warm water until you get a non-sticky dough, easy to shape, on which let it rise for 15 minutes.

Meanwhile, finely chop the onion and fry it in oil. Add the lightly thawed spinach and keep on low heat, stirring gently until all the spinach melts well and the water decreases. Lower and mix with the telemeau, 100 gr crushed feta cheese and ground pepper. Spread the pizza dough on a form, place the composition on top, then the rest of the diced cheese. Sprinkle the sesame seeds on top and put in the preheated oven until browned.

4. To make the sauces, add the tomato sauce, vinegar, sugar, garlic, basil, salt and pepper in a blender and mix until smooth. Put ricotta, peel and lemon juice in a bowl and mix. Season and set aside.

5. Heat a large saucepan over medium heat. Add the spinach and mix until lightly wilted. Allow to cool on a plate. Drain to remove as much liquid as possible, then mix in ricotta.

6. Preheat the oven to 240C. After the dough has risen, divide it in half and stretch each piece into a round shape, about 25-30 cm in diameter and 0.5 cm thick.

7. Divide the tomato paste, then the sauce, on each pizza, spread evenly with the back of a spoon. Add the spinach and ricotta mixture, then add the mushrooms, mozzarella and parmesan. Place on 2 baking trays sprinkled with flour. Put in the oven for 10 minutes, then remove the trays and break the eggs on top (2-3 on the pizza). Put in the oven for 3 minutes. Serve hot.

Place the fresh pizza dough on the worktop (on the wrapping paper) and divide it into 4 equal parts.

Prepare a tray lined with baking paper and sprinkle flour on the counter. From each side of the fresh pizza dough, form a ball that you spread with a rolling pin and then shape it by hand, then place it on the baking paper. Do the same with the other 3 parts.

Distribute the composition of spinach, garlic, parmesan and sour cream evenly on each piece of fresh pizza dough.

Spread the composition over the entire surface of the dough, leaving a gap in the middle. Put in the oven, in the preheated oven, at 180 & degC, for 15 minutes.

After 15 minutes, remove the tray and add an egg to each piece of pizza (in the gap formed earlier). Bake again at 180 & degC for 10 minutes.

Remove and serve. If you still want, you can add more Parmesan when serving.
