  1. Preheat oven to 180 degrees C (gas mark 4). Grease a 20cm square baking tin.
  2. In a medium-size mixing bowl, blend eggs, sugar and butter. Mix in matzo meal, cocoa powder and walnuts (if desired). Transfer batter to prepared baking tin.
  3. Bake at 180 degrees C (gas mark 4) for 30 minutes.
  4. In a small mixing bowl, blend chocolate, butter and water. Spread over cooled brownies.

These are definitely for the chocolate lovers. Very fudgy! I did have trouble with the bake time. At 30 minutes, it was still really jiggly, and at 35 minutes, my knife came out totally batter coated. I ended up baking them for about 45 minutes. The insides were very moist, but the top and sides came out very hard and as a result, crumbled when I cut them. Nevertheless, they tasted great and the kids loved them.-06 Apr 2004

This recipe is amazing they do not taste like they are for passover, I made these into cupcake's and they were to die for! I whipped the sugar and butter until it was very pale to incorporate more air to make it fluffy. as well as the ganache topping i whipped until it was cold making it like a piped icing-04 Mar 2010

I'm not Jewish, but I got this same recipe from a dear Jewish friend of mine. This brownie recipe is our family's favorite. We load up on the Manischewitz Cake Meal during Passover and make these INCREDIBLE brownies all year long!! We use Nestle semi sweet chocolate chips instead of the semi sweet squares. We use about 1/2 to 2/3 of the Nestle bag, depending on how rich you want them. Every time comes out perfect...never too sweet. YUM!-29 Jul 2009


Surviving Passover Without These Pesach Brownies Is Impossible

A week without bread? Doable. Deprive us of dessert? Forget about it.

I can&apost remember a Passover without brownies. I realize that might sound crazy. It&aposs a weeklong observance marked by unleavened eating after all. In my family, though, more than a few days without dessert sounds even crazier.

That sweet tooth goes back generations my great-grandmother couldn&apost bare the idea of eight days without an after-dinner indulgence. Thanks to her chocolate cravings (a mere century ago), this Kosher-for-Passover confection has become a family staple. It&aposs so engrained in our Passover routine that my mother ships homemade batches across state lines to her grown sons. That&aposs dedication.

Tracking down the recipe. that&aposs another story. To my grandmother, it&aposs muscle memory. A brilliant baker now in her nineties, she&aposs been whipping up the recipe for years. It&aposs the same story with my mother. She doesn&apost need the notes scribbled in her cookbook𠄺 high school graduation gift from my grandmother that&aposs seen its fare share of Seders and spills since its dປut in the 70&aposs.

Me, on the other hand? I may be the first in my family that has to work word-for-word off of a recipe to avoid disaster. For the sake of my Passover future, it was time to get this Pesach staple down on paper.

Luckily for me and my limited baking skills, these Passover brownies are so simple they practically make themselves. They&aposre not quite the same as grandma&aposs can&apost-just-have-one, everyday batch of brownies, but for Passover-friendly, they come pretty darn close.


Vegan No Bake Brownies With Variations

Sometimes I really miss baking.  Don’t get me wrong – working as a chocolatier is soul-satisfying, with fine chocolate’s unmistakable taste and aroma and the other fine ingredients I use, I’m in heaven.  On those days when I’m immersed in administrative business tasks and I’m away from the chocolate, I yearn to be back making it.  I love this beautiful food and how happy it makes everyone, including me.

But there is something very special about pastry too, with its varied components coming together in exciting ways when a dessert is assembled and its flavors and textures combined.  When I did pastry full time, I loved coming up with new creations for my clients - whether it was the restaurant needing something special for Mother’s Day or a client with a dietary restriction needing a creative solution.  I miss working regularly with those clients (though many have remained devoted fans of my chocolates too).  And while I still bake for my family, of course it isn’t the same.

So I was gratified to have fit this new chocolate dessert creation into our busy production schedule. My original intention after launching Dear Coco Chocolate was to continue developing new pastry recipes each month, but as our volume increased I found I just didn’t have the time to be creating, testing and refining new ideas that frequently. In preparation for a chocolate class with a dessert demo that I taught last week, I put my pastry hat back on with the goal of creating something easy and approachable but absolutely delicious. The end result is so simple and so yummy (even if technically it isn’t baking since you don’t have to turn on your oven) – this recipe is a raw brownie which uses easy-to-find ingredients from your local supermarket. The brownies are gluten free (perfect for Pesach!), dairy free and can be made vegan by substituting agave syrup for the honey. There are variations which I included at the end of the recipe, but feel free to do some experimenting with your own favorite flavors and add-ins as the recipe is very forgiving.

This Recipe Is Gluten Free and Dairy Free

Most of the Passover meals are meat meals. According to strict kosher laws we cannot serve dairy desserts after meat meals. So not only do we have to stay away from chometz during Passover but for most of the festival meals we have to steer clear of dairy as well. That is not a problem for us because these brownies are dairy-free and can be served at any meal. This recipe is also gluten free because it uses potato starch in place of flour.


Set the oven at 325 degrees. Line an 8-inch square baking pan with foil. Lightly grease the foil.

In a large bowl, whisk together the eggs and sugar. Whisk in the cocoa powder and salt. Then whisk in the oil until thoroughly combined.

Use a rubber spatula to mix in the cake meal, chips, and nuts. Spread the batter in the prepared pan.

Bake the brownies for 25 minutes or until a toothpick inserted into the center comes out moist the edges will be slightly drier. Don't overbake.

Cool the brownies in the pan for 10 minutes. Use the foil to lift them out of the pan and set brownies on a cake rack to cool completely. Cut into squares, discarding the foil.

And that&aposs exactly what he did in his new cookbook, Jew-ish: Reinvented Recipes from a Modern Mensch. Using coconut flour instead of wheat flour, Cohen created a brownie with a consistency that&aposs simultaneously tender and dense, while also keeping the brownies gluten-free and kosher for Passover.

Then, in an homage to the canned Manischewitz macaroons he grew up eating at his own family&aposs Passover Seder, Cohen tops the coconut-flour brownies with a layer of well-salted coconut macaroon to yield an eye-catching hybrid dessert that&aposs the best of all worlds: chewy, crunchy, and not too sweet.


There’s no doubt that the most popular Passover recipe on my site is these brownies. These are a huge hit during Passover. Thousands of my readers make them.
This is a super simple recipe, everything goes in one bowl, no extra dishes or mess and you don’t even need to use a mixer, which is an added bonus.
It takes 10 minutes to prepare and into the oven they go. A great recipe for tasty, moist, chocolaty brownies.

Ingredients:

200 grams bittersweet chocolate
120 ml oil (1/2 cup)
200 grams sugar (1 cup)
4 large eggs
3/4 cup ground nuts / kosher for Passover self-raising flour
1/4 cup matzah flour
Pinch of salt

Preparation:

1. Preheat an oven to 180°C.

2. Break up the chocolate into squares and place in a microwave safe bowl together with the oil. Microwave until melted and mix until well combined.

3. Patiently add the eggs, one after the other, and mix well after each egg before adding the next one. Then add the sugar, nuts, and at the end, the matzah flour.

4. Pour the batter evenly into a greased pan.

5. Bake for around 25 minutes or until a toothpick inserted in the middle comes out with moist crumbs.

6. Cool for a few hours in the fridge and cut into squares.

I give a few preparation options according to the flours available during Passover
3/4 cup matzah flour + 1/4 cup ground nuts
3/4 cup ground nuts + 1/4 cup potato flour
You can make these year-round with 1 cup of regular flour or 1/2 cup flour + 3/4 cup ground nuts.
You can make these a few days in advance and keep in the fridge. You can also freeze them. If you want to really taste the nuts in the brownies then coarsely grind them as opposed to finely grind them. The muflettas are in the background of these brownies


BEST Passover Brownies

Anxious about missing your cakes and desserts over Pesach? Fear not. Once you try this recipe you will never again fear the holiday of no flour! This is a family fav and always made our house the place to be over Passover. Be prepared to make a double batch of this recipe since it’s usually devoured within minutes of leaving the oven!

Ingredients:
1/2 cup of vegetable oil
4 eggs
1 1/2 cups of sugar
1/2 cup of potato starch
1/2 cup of cocoa (use Hershey’s coca for the best taste!)

Directions:
Mix the above ingredients together in a large mixing bowl then bake in a 9吉 pan on 350′ for about 25 minutes or until done.

OPTIONAL TOPPINGS: Melt chocolate chips in the oven on 30 second increments, stirring until smooth and melted. Drizzle over brownies then top with your choice of potato chips, chocolate chips, mini marshmallows, crumbled macaroons, powdered sugar, cocoa powder, or good ol sprinkles.

The Exceptional Passover Brownie

In 2006 New Yorker Claire Sauerhoff submitted her recipe for chocolate brownies with walnuts to a nationwide competition for the best brownies in the country. Although she was an amateur home cook who baked simply for the joy of making desserts for friends and family, others knew that that her exceptional brownies were ready for the big leagues.

She won that competition, besting thousands of other submissions to be named the People's Choice Award as the country's "best darn brownie." The award gave her the courage to change her career, becoming a professional pastry chef, and for several years, she ran a bakery she called The Exceptional Brownie.

Here is her brownie recipe. It is kosher for Passover and uses Passover cake meal in place of flour and no leavening agent, keeping within the holiday's precise dietary rules.

Choose a bittersweet chocolate (it has a deeper flavor than semisweet) that is certified kosher for Passover and make sure you do not use unsweetened baking chocolate. Use the best available bittersweet chocolate and consider trying one of the Israeli brands, such as Elite, Paskesz, Lieber's or Carmit, or Alprose which is from Switzerland. Look for these brands in the special kosher for Passover section of your supermarket or at a kosher market.

For the cocoa, which rounds out the chocolate flavor in the brownies, Claire suggests using a Dutch processed cocoa as it&rsquos less acidic. Use your favorite nuts: walnuts or pecans are traditional but almost any nut, including almonds or peanuts, can be used.

To achieve a fudgy result, be careful that you don't overbake the brownies. After 35 minutes, begin to test for doneness with a cake tester or a toothpick that you stick in the middle of the pan. You're looking for the tester to come out with just a little batter on the end.
