Fluffy cherry cake

We wash the cherries, remove the seeds and let them drain in a sieve.

I whipped the egg white with the salt powder.

Then add the beaten egg white and sugar and vanilla essence until you get a meringue.

In another bowl, beat the yolks with the 3 tablespoons of oil like mayonnaise and then add them to the meringue.

Mix the flour with the baking powder and then put it in the meringue little by little and mix from top to bottom. I used the mixer everywhere.

The baking tray is covered with baking paper, the composition is poured and the cherries are pressed with a little flour.

Bake for 30 minutes, until golden and test with a toothpick.

Leave to cool and then cut.
