I fondly remember the cakes (Pelincile Domnului) that I made with my mother. In the kitchen where the fire was burning in the stove (yes, I grew up in the country!) My mother, with her sleeves rolled up, was spreading the dough on the kitchen table to make a thin, thin sheet. Dad was responsible for fitting the fire in the stove. When the dough was just well spread, my mother would take the dough and bake it on a very smooth sheet, prepared in advance, and which was placed on the stove when heated. Strudel with walnuts and cherries
Ingredients for 6 pieces:
1 cane flour
1 cup boiled milk
2 tablespoons sugar
2 sachets of dry yeast
20 g of fresh yeast
a little butter / a little yogurt / a little sour cream
2-3 eggs and 2/3 yolks

cherries from compote
whey / lei / melted butter for kneading
oil for greasing trays
water + sugar + oil to grease the cake after baking
1 egg + oil + sugar to grease the raw cake
First and foremost sift the flour 2-3 times. Then do the making. Put a cup of flour in a vailing, add the boiled milk and with a fork mix everything until they are no longer lumpy. Add sugar and yeast, soft butter, yogurt and sour cream. Homogenize and leave to rise for half an hour. Then mix the dough with the rest of the flour.
When kneading, add milk, if necessary, sugar from time to time, according to taste, and with melted butter or oil and whey, knead the dough very well, taking a little of the liquid composition, greasing your hands and kneading a cake dough, on which leaves it to rise for an hour.
Meanwhile, prepare the filling. Mix the ground walnut with the sugar, vanilla sugar and rum essence, plus the egg whites. You drain the cherries from the juice. Cake trays, smaller and taller, grease them well with oil or a piece of bacon.
Divide the dough into 6 pieces, which you in turn spread in a rectangular shape, which you grease a little with oil. Take the walnut composition from the composition and grease the sheet with your fingers, pressing so that the walnut enters the dough a little. You put the cherries and so on, you press them.
Tighten the roll, without tightening it too much, but leave it wider to allow it to grow.
Put the strudel in the tray and push it with a fork in places. Let it rise for 10-15 minutes. Grease it with beaten egg, oil and sugar together and put it in the preheated oven on a faster heat at the beginning and softer at the end.
Take the strudel out of the oven and grease it with water and oil and sugar plus rum essence, possibly, and cover it with a clean napkin. After the auburs have penetrated it, you can take the beautiful strudel out of the pan. Leave it to cool and portion it.
How to prepare spicy pork tenderloin in puff pastry?
The muscle is washed and dried in a napkin, the corner is cut thinner, so that it remains as regular as possible.
Separately put on the small grater or in a blender a very small onion (about 30 g) and 1-2 cloves of garlic. Mix together with 1 tablespoon oil, wine, 1 teaspoon salt, thyme, ground cumin, hot peppers, oregano, rosemary, pepper. I put the spices in the grinder (I have a grinder only for spices) and I grind them a little more. I make my own spice mixes, buy autumn thyme from the market and dry it, hot peppers, rosemary and bay leaves in the yard, etc.
Grease the meat with the spice mixture and let it cool, ideally it should stay for 10-12 hours, but if you are in a hurry, let it sit for about 30 minutes, so that the flavors enter the meat.
In a pan, put a little oil and lightly brown the muscle.
TIP: the muscle is lightly browned, 3-4 minutes, on 3 sides, it is not allowed to penetrate completely, it is baked in the oven and must not be dry. My photos are taken with the phone, my camera broke, so they are darker than in reality, but you can see how the muscle has left its pink juice, so it is light in the blood (medium done).
Spinach filling: cleaned and washed spinach, scald for 5 minutes in salted water, rinse with cold water, squeeze, cut into small pieces. Add the cheese (fresh, urda, telemea, mozzarella, feta, what you have in the fridge), salt, pepper, finely chopped greens and beaten egg, a little, so that the composition is not too soft. Mix everything well.
Cut the dough sheet in 2, cover the pieces of muscle in the spinach composition, respectively mushrooms & ndash on all sides, then cover with the puff pastry. The joint should come underneath, above it should look straight, beautiful. Cut off the excess dough and place in a tray lined with baking paper. From the leftover dough you can make a decoration on top: leaves, flowers, according to your imagination. Grease with the rest of the beaten egg, you can sprinkle with poppy seeds, sesame seeds, cumin, grated cheese. Bake at the right heat until the dough turns golden - about 30-50 minutes, depending on the oven.
Serve hot or cold, it is just as good with a garnish or salad.
TIP for the recipe for spicy pork tenderloin wrapped in puff pastry: I recommend cutting it with a serrated knife, with light movements, not to break.
