Banana buttercream

You can generally tell if the buttercream is homemade at a children’s birthday party without even trying it. Just look out for abandoned, naked cakes with the icing brutally licked clean off. Kids have a 6th sense for sniffing out icing made by Mum or Dad and they love it. I don’t think they hugely care whether it’s perfect or not. It’s us adults who worry about that kind of stuff.

This is an easy peasy recipe for a buttercream with just a bit of a difference that my sons really rather like. Light and fluffy and tasting just a little bit like a banana milkshake. Just call me kitsch.

Banana buttercream

Covers about 12 cupcakes but depends on how large the cakes are and how much icing you like

– 2 tbsp banana milkshake powder

– banana foam sweeties or banana chips to decorate your cakes with

To make in a KitchenAid: Use the flat beater to cream the butter until soft and light – about 4 minutes. Then add the icing sugar spoon by spoon, mixing on a low speed until all incorporated, then add the milkshake powder. Beat on high for 7 minutes until the buttercream looks like mousse – flecked with air bubbles, then use to pipe onto cupcakes or to sandwich larger cakes together. Place more buttercream on the top and add sweeties!

NB: If you don’t want banana buttercream then simply substitute the milkshake powder for another flavour such as 2 tbsp vanilla extract/Baileys/Malibu/orange extract etc. My favourite is vanilla.

NB: This buttercream can be made using a handheld mixer or a wooden spoon but it will take a LOT longer. I can’t tell you how long as it completely depends on how hard you beat the mixture and how much you move the mixer about. Look for a mixture similar in texture to mousse with flecks of air running through it. I find it very hard to achieve the same lightness without a stand mixer though – I would employ the strongest person in the house to have a go!

I absolutely loved this recipe, but I changed it quite a lot to make it work. I added the banana to the butter and icing sugar mixture and beat that with an electric mixer. I then added the vanilla essence and the chocolate. However at this point I didn't think that the mixture needed milk at all, and was actually a little too runny and not chocolatey enough so I added about 1/3 cup of cocoa - and it turned out to be the best icing I have ever made. So delicious.

Whatever you do don't taste this before you put it on the cake or cupcakes. Otherwise, you won't have any left because you won't be able to stop eating it. Don't ask me how I know this fact. Time to make a second batch (good thing I had more bananas)

Banana Bars with Browned Butter Icing

We are all guilty of throwing out food. Those leftovers you thought you&rsquod eat. That mystery container well past its due date. But, I have a hard time throwing out bananas. Overripe bananas can be the beginning of far too many good things to let them go to waste.

This weekend, I found myself with several super-ripe bananas and took to the internet to find something a little different to do with them. That&rsquos when I found these bars.

The bars themselves are essentially banana bread in flavor and texture. In this case, though, the batter is poured into a half sheet pan and baked into thin bars.

I suppose you could stop there if you want. It&rsquos banana bread, after all. We love banana bread, right?

But, with a few more minutes of effort, you can make these really something special. In those few extra minutes, you can brown some butter, mix in some sugar and such, and make a super-extra-good icing to top off your banana bars. The icing is more than a bit on the sweet side, but it is a great complement to the banana bars.

A little advice: Before you start making the icing, have all the ingredients ready to go so you can work quickly to mix the icing. Sifting the confectioners&rsquo sugar would be ideal for a smooth texture, but it&rsquos not necessarily required.

If you have some bananas that need using, do yourself a favor and bake a batch of these Banana Bars with Browned Butter Icing. They may just become your favorite thing to bake with bananas!


Can Easy Banana Cake Recipe be Frozen?

There have been times when there were a piece or two of this cake that would not be eaten before it goes bad. I like to freeze the cake if I know this is going to happen. Because of the frosting on this cake, I like to freeze it on a plate before storing it in a freezer bag. This keeps the icing from being smashed all over the bag. I take the cake out of the bag before letting it thaw.


Banana Snack Cake with Brown-Butter Icing

Preheat oven to 350°F butter and flour a 9-inch springform pan. In a bowl, whisk flour, baking powder, baking soda, salt and nutmeg. In a separate bowl whisk buttermilk, bananas and vanilla.

In a large bowl, using an electric mixer on medium-high speed, beat butter and sugar until light, about 3 minutes. Beat in eggs 1 at a time. Scrape down sides and bottom of bowl beat again. Beat flour mixture into butter mixture in thirds, alternating with half of banana mixture, until batter is smooth. Spread batter in pan.

Bake cake until golden and a tester inserted into center comes out clean, about 45 minutes, rotating halfway through. (Tent pan with foil if cake is browning too quickly.) Cool completely in pan on a wire rack.

Make icing: In a skillet over medium heat, melt butter, swirling occasionally, until it has stopped foaming and milk solids in bottom of pan have turned golden brown and smell nutty, about 7 minutes. Transfer to a bowl and let cool slightly. Whisk in confectioners' sugar, cream, vanilla and salt until smooth.

Run a knife around inside edge of pan release cake ring. Spread icing on top serve.

Let’s get into the good stuff. I’ve been meaning to bake my favorite banana cake as a banana layer cake for the past year. Do you remember when I shared my love/obsession for this banana cake? You know, the cake recipe I stalked Kevin’s cousin for like a complete lunatic? Turns out, it’s just as moist/perfect/unbelievable as a layer cake too.

Here’s why it’s my favorite banana cake:

  • Front-and-center banana flavor.
  • Buttery and cakey.
  • Cinnamon-spiced.
  • Dense without tasting too heavy.
  • Soft crumb that holds its shape.
  • Easy to make, very basic ingredients.

Just read the reviews— the cake is phenomenal.

Baking the banana cake as a layer cake changes the frosting to cake ratio. More layers = more frosting in each bite. That’s certainly something we’re all OK with. Also, aren’t layer cakes a bit more fancy? I don’t know about you, but I always feel more accomplished/fancier serving a layer cake vs a sheet cake.

But we’re not only changing the shape and presentation of the banana cake today. We’re also serving it up with THE BEST FROSTING TO EVER HIT YOUR LIPS. Dramatic? Who… me?

And the frosting is what I really want to focus on today.

I’m not sure why I waited over 30 years to turn regular cream cheese frosting into brown butter cream cheese frosting? Learn from my mistake and don’t waste any more time. It’s everything you love about cream cheese frosting– tangy and sweet, but not as tooth-decaying sweet as buttercream. Creamy, thick, silky, smooth. Yep, all of the above. But this version has brown butter hiding inside. Those specks of nutty toasty buttery goodness bring cream cheese frosting up about 700 notches on the delicious scale. Do you want to upgrade a great dessert into the mega-watt billionaire of desserts? Add brown butter. I wrote an entire tutorial on how to brown butter so you can learn exactly how it’s done!

Time saving tip: Browning the butter and refrigerating it until solid is a whole extra step, but do this before you even start the cake. By the time the baked cake has cooled, the brown butter is ready to be whipped into frosting.

Have I mentioned how creamy this stuff is?

I brought this cake over to our friends and it was like I gave them a block of gold or something. They were impressed by the cake’s flavor and texture, but kept enthusiastically raving about the combination of banana/cinnamon/cream cheese frosting/brown butter.

I promise you’ll understand what all the fuss is about after 1 bite.

To prepare bars, combine banana, brown sugar, and 1 tablespoon butter in an 8-inch square baking dish. Bake at 400° for 35 minutes, stirring after 17 minutes. Cool slightly.

Reduce the oven temperature to 375°.

Weigh or lightly spoon cake flour into dry measuring cups level with a knife. Combine 9 ounces (about 2 1/4 cups) flour, soda, and baking powder in a medium bowl. Combine banana mixture, buttermilk, and 1 teaspoon vanilla in another medium bowl. Place 1/2 cup butter and granulated sugar in a large bowl beat with a mixer at medium speed until well blended. Add eggs to granulated sugar mixture mix well. Add flour mixture to sugar mixture alternating with banana mixture, beginning and ending with flour mixture.

Pour batter into a 13 x 9&ndashinch baking pan coated with baking spray. Bake at 375° for 20 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack.

To prepare frosting, melt 1/4 cup butter in a small saucepan over medium heat cook 4 minutes or until lightly browned. Cool slightly. Combine browned butter, powdered sugar, cream cheese, and 1 teaspoon vanilla in a medium bowl beat with a mixer until smooth. Spread frosting over cooled bars. Sprinkle with pecans.


Best Ever Banana Bundt Cake

Yes, I’m the crazy lady over here adding yet another banana recipe to my site. I think I have at least 25 recipes that include banana in them, and I don’t plan on stopping. What can I say? I’m bananas for bananas! This cake is one I’ve been wanting to share for weeks now, but I held off until all of my summer recipes were posted. It’s light, fluffy and bursting with banana flavor. And don’t even get me started on that brown butter icing. Absolutely heavenly!!

For this recipe (and really any banana recipe) you want to make sure your bananas are dark and heavily spotted. That’s key in getting a pronounced banana flavor. So if your bananas aren’t quite there yet, give them time. I promise you’ll enjoy this cake so much better a few days later when they’re ripe & ready to go!

Now for a few more tips. Make sure you’re using room temperature ingredients. Your butter should be nice and soft. You’ll want to beat it for 2 minutes, then an additional 4 minutes after adding the sugar and vanilla. We’re going for pale and fluffy. Separate your eggs and beat the egg whites until stiff peaks form, then gently fold them into the batter. This will help create a tall, light cake. We’re not going for dense banana bread after all.

After the cake comes out of the oven and you’ve inverted it onto a wire rack to let it cool, you can start the icing. Brown the butter (if you’re new to this technique you can find helpful tips here), then beat in the remaining ingredients. If you find the icing is too thick, you can always thin it out by adding a teaspoon or two of hot water. Drizzle it over the top of the cake, then immediately add the nuts. Chopped walnuts or pecans work, just toast them in a dry skillet for a few minutes to give them more flavor and crunch. Don’t skip this step, trust me!

Once the icing has set, you can slice it up and serve it. Just make sure to have a tall glass of milk on hand… you’ll need it! I hope you’ll enjoy this cake as much as our family did. It’s practically perfect in every way!
