Depending on the filling, the pancakes are served both as an appetizer and as a dessert. The recipe we propose below can be honored along with other delicious appetizers to the liking of the whole family.


250 g flour,
5 g salt,
60 g sugar,
330 ml of milk,
2 beaten eggs,
a packet of vanilla,
30 g melted butter,
grated peel of a lemon

450 g fresh spinach or 225 g frozen spinach,
2 tablespoons butter or oil,
450 g sweet cheese,
1/4 cup sour cream,
3 eggs,
1/2 teaspoon salt,
ground nutmeg to taste,

1/2 cup grated Parmesan or cheese


To prepare the pancakes, sift the flour into a bowl, then add the beaten eggs and mix gently with the whisk. In another bowl, add salt, sugar and vanilla to the milk, stirring gently. In the flour bowl, gradually add the milk, stirring constantly, until the dough becomes creamy like cream. Then add the melted butter and about a third of the grated peel of a lemon. Put the dough in the fridge and let it rest for about an hour.

Put the pan of pancakes or Teflon on the fire (between medium and large). After the pan has warmed up well, before baking the first pancake, grease it with a little butter.

With the help of a polish, take it from the pancake dough (about 30-45 ml of dough for a pancake), and spread it evenly on the bottom of the pan. When the pancake starts to come off the edges of the pan, turn it on the other side and leave it for about a minute.

Repeat the operation until all the pancake dough is finished. 10 pancakes come out of the above composition.

If you use fresh spinach, wash it well in some water, then put it in a pan in which 2 tablespoons of butter or oil are heated. When the leaves become soft, remove from the heat and allow to cool. Frozen spinach is thawed and then strained with excess water.

Crush the cheese well with a fork, then mix with butter and cream, spinach and 1/2 teaspoon salt. Add the eggs and mix well. At the end, season with nutmeg.

Put 2 or 3 tablespoons of the cheese mixture in the middle of the pancake, fold the pancake at both ends of the filling and roll.

Place the folded pancakes in the baking dish with the rolled end down, grease them well with melted butter, then grate the dry cheese. Cover the baking dish with a lid or aluminum foil and bake in the preheated oven over medium heat (180 C).

After 15 minutes, remove the foil or lid so that the pancakes will brown. When browned, the pancakes turn golden. Remove from the oven and serve hot.
