1. The fish is cleaned of scales, gills and intestines. Wash with cold water, dry and cut into pieces. Sprinkle with lemon juice and season with salt and pepper. Leave to cool for 30 minutes.

2. Peel, wash, chop and fry the leeks and garlic in a hot oil pan. Extinguish with water and simmer for 5 minutes. Pour into a pan with a little water, then add the carrots, parsley and diced potatoes. Sprinkle with a pinch of salt and pepper, and place the fish pieces on top. Sprinkle everything with oil and bake for 30-40 minutes.

OVEN WITH SAUCE AND VEGETABLES IN THE OVEN

INGREDIENTS
1 piece of white fish (I used pikeperch)
2 white potatoes
1 handful of yellow beans (frozen)
4 tablespoons homemade tomato juice
2 cloves of garlic
1 teaspoon olive oil
dried oregano, green dill

METHOD OF PREPARATION
When I managed to find Danube white fish, I froze pieces in several baby bags and today I discovered the last one.
I let it thaw, after which I washed and boiled the fish over low heat for about 20 minutes.
I cut the potatoes into pieces and steamed them with the yellow beans for 20 minutes or they can be boiled, but not completely.
I made the sauce with 3-4 tablespoons of tomato juice, 1 teaspoon of olive oil, 2 cloves of crushed garlic, oregano and placed it in a heat-resistant dish. Over I formed a bed of vegetables and above the fish.
I put it in the hot oven for 30 minutes to cook well and brown nicely.
I decorated with green dill! Good appetite!


METHOD OF PREPARATION

1. The pieces of fish must, above all, be salted and peppered, and then given through flour. Heat about 3 tablespoons of oil in a pan and brown the fish well on each side. Once browned, the fish should be removed from the pan and set aside.

2. In the same pan, without washing it, add the rest of the oil. Then add chopped onion, celery, crushed garlic and chopped peppers. Heat them until you notice that they start to soften, stirring constantly. Add the carrots. Then add 2-3 tablespoons of wine and sauté the vegetables for about 5-6 minutes.

3.Take the pan off the heat and season the vegetables with salt and pepper. Place the vegetables in a fairly large pan, suitable for the amount of fish to be cooked, and place the vegetables in the first phase. Place the pieces of fish on top of the vegetable bed. Pour the tomato juice, then finely chop the canned tomatoes to distribute them over the fish. Pour the remaining wine into the tray.

4.Add peppercorns (you can use red pepper, it is very fragrant), bay leaves and thyme sprigs.

5. The tray must be covered with a lid or aluminum foil and placed in the preheated oven at 190 ° C for 45 minutes. Then remove the lid and leave the fish in the oven until you notice that it is browned on top.


Fish with Baked Vegetables

Baked fish recipe with vegetables it can be an ideal dinner. Meat is good, but in order to have a proper diet it is necessary to eat fish.

The fish recipe with vegetables harmoniously combines the taste of fish with the aromas of vegetables and spices and, surely, the whole family will enjoy it with pleasure. For the fish recipe with vegetables we use any type of fish we like: tuna, bream, mackerel. Because we cook the fish recipe with vegetables in the oven, the kitchen ventilates quickly and we easily get rid of the fish smell.

I chose to prepare this recipe with a fresh tone. Tuna is one of the tastiest fish, especially when prepared in the oven. Tuna is a sea fish, bony, with a tender, fine flesh and an oily texture. Tuna fat contains omega 3 which helps lower cholesterol and protect the cardiovascular system. Tuna is related to mackerel and is found fresh, frozen or canned. With canned tuna we can prepare a wonderful pasta recipe with tuna and tomato sauce.

Sea bream fish is a white meat fish with a low content of LDL cholesterol and fats, but at the same time it is an excellent source of phosphorus, protein, vitamins B6, B3 and B2. It can be prepared in different ways from grilled, fried, or baked, but it is also recommended to eat raw. We chose the oven version with many vegetables.

Carrots are cleaned, washed and put on a large grater. Peel and chop the onion and garlic. Finely chop the pepper. The mushrooms are cleaned, washed and sliced. Cut the mushroom stalks into small pieces. Peel a squash, grate it and slice it.

Half of the grated carrots are mixed with the finely chopped mushrooms, the finely chopped onion, half of the garlic and a little of the chopped peppers. The vegetable mixture is seasoned with salt and pepper. Fill the fish with this mixture.

The fish stuffed with vegetables is placed in a tray and sprinkled with oil. Slices of potatoes and mushrooms are placed among the fish, on top are placed the rest of the vegetables, grated carrots, peppers, onions, garlic. Season with salt and pepper. Pour a glass of wine, a little water and 1-2 tablespoons of oil. Put the tray of fish stuffed with vegetables in the oven over medium heat.

When the vegetables are well penetrated, remove the tray from the oven, place a slice of lemon on each fish and sprinkle with finely chopped green parsley.
