Mix honey with mustard, ketchup and olive oil. Add thyme, paprika, garlic and season with salt and pepper. Grease the pork ribs with this sauce, put them in a bowl, cover them with foil and put them in the fridge for at least an hour. After an hour, take them out of the fridge and place them in a tray lined with baking paper, then put them in the preheated oven for about 50-60 minutes.
Wash the potatoes well and boil them in salted water for about 10 minutes. Then drain the water, sprinkle them abundantly with oil, season with salt and pepper, then place them in the pan near the ribs and bake for about 30 minutes.
