Onions and peppers are cleaned, washed and cut. In a pan in which I put a little oil, cook the onions and peppers. Add the chosen rice, washed and then drained. Season with salt and pepper to taste and add the wine. fire until it evaporates, stirring occasionally then pouring everything into a pan.
Separately, place the fish, minced and seasoned with salt and pepper, on the grill of a tray in which I put a cup of water and put it in the oven for about 15 minutes. then remove the pieces of fish, sprinkle them with a little oil and place them over the rice in the pan. Add the sauce from the pan in which we had the fish and another cup of water (or fish soup). Put in the oven and keep until the rice blooms (if necessary we add more water) and the fish is done and it is well browned. Season with green parsley and serve with a white wine.
