RECIPE PREPARATION Appetizer check and muffins:
Beat eggs with sour cream and white flour. Add the baking powder and the rest of the ingredients. Mix well. Add the vegetables and pepper to taste. Put the dough in the muffin tins up to 3/4 of the form and the rest of the dough in a tray lined with baking paper. How do we prepare the recipe for a fluffy appetizer cake with ham, peppers and cheese?

- Break the eggs, separate the egg whites from the yolk.
- In the yolks, add twice as much salt as you can with three fingers and mix very well using a whisk. We leave the yolks aside, to intensify their color.
- Beat the egg whites, using a mixer.
- Add pepper as much as you can with three fingers. Pepper is optional, but a drop of freshly ground pepper gives it a special flavor.
- Mix the yolks and add the oil little by little, while mixing, as with mayonnaise.
- Pour the yolk mixture over the egg whites and mix lightly, from the bottom up.
- Add the peppers, olives, cheese and sausages, all cut into cubes. Stir again.
- Add flour and baking powder, using a sieve. We add them in the rain, gradually, during which time we mix constantly, from the bottom up, with light movements.
- In a cake pan lined with baking paper, turn the dough over. We level it above.
- Add the appetizer cake in the preheated oven at a temperature of 200 degrees Celsius, top-down fire in electric ovens, medium heat in gas ovens. Baking takes 40-50 minutes, until nicely browned on top.
- Remove from the oven, leave to cool for at least 20 minutes. It does not cut hot, as it crumbles.

As you can see in the pictures, I made 2 appetizer cakes because I used double the quantities mentioned in the list of ingredients, and although I have glass trays that can only be used greased with oil, I chose to line each tray with baking paper because this way it is 100% sure that the cake does not break when we take it out of the tray.

In a large bowl add flour, potato flakes and salt, and mix well. Then incorporate the cream, half the amount of grated cheese, egg, oil and melted yeast in warm milk, mixed with sugar. Using a mixer, mix well until you get a homogeneous composition.
Melt the butter in a large pan and add the onion. Cook until it starts to soften, add the finely chopped bacon and mustard, season to taste with salt and pepper. Turn off the heat and add the sour cream. Mix well and allow the composition to cool.
Add special paper to the muffin tray or grease the butter forms. Fill each form halfway with dough, then form a crater in the middle. Add the filling to each crater. Then cover with dough. Make sure that the muffins are not higher than 3/4 of the shape because they will stick out. Sprinkle the remaining cheese on top.
Leave the muffins to rise for 20 minutes then bake them in the preheated oven at 180o Celsius for 15-20 minutes or until they are cooked and nicely browned.
How to serve appetizer muffins with bacon, potatoes and cheese
Serve the hot muffins with a seasonal salad or as such. They can be served as appetizers or for breakfast.
