Coffee ice cream

Combine the milk, cream, 60 g of sugar, powdered milk and dextrose in a saucepan.

Stir, turn on the heat and bring everything almost to a boil.

While the milk mixture is heating up, beat the yolk with the remaining sugar in a bowl.

Pour the whipped egg yolk with the sugar into the milk mixture almost to a boil and stir.

Bring the cream to 85 & degC, then immediately transfer it to a cold bowl to stop cooking.

Add the carob seed flour and the mocha coffee to the base cream to which you have added soluble coffee to intensify the taste.

Emulsify everything with an immersion blender. Transfer the bowl with the mixture to an ice bath to bring it to room temperature.

At this point, transfer the mixture to the ice cream maker and let it stir for about 40 minutes or until the ice cream has reached the desired consistency.

Once well whipped, transfer the ice cream into a container, cover it with plastic wrap and place it in the freezer for at least an hour before portioning it and serving it on the table.

Cold coffee with amaretto

Ingredients for 4 people:
- 2 cups of restricted coffee
- A shot of amaretto liqueur
- 3 crumbled macaroons
- ice cubes
- granulated sugar to your taste
- whipped Cream

Preparation:
Coarsely crumble the macaroons with a bottle and set aside.

A recipe by maestro Luca Montersino, my mentor, to close our menu with a coffee parfait with an incredible consistency, a caress for the palate

  • 500 ml of cream
  • 250 ml of coffee
  • 120 g of granulated sugar
  • 100 g of egg yolks
  • q.s. of ground coffee

  1. Pour 100 ml of water into a saucepan, add the sugar and boil for 8 minutes until it forms a thick and transparent syrup. Work the egg yolks with a whisk until they are fluffy, pour in the hot syrup and mix quickly.
  2. Add the coffee and let the mixture cool while continuing to stir. Gently stir in the whipped cream and mix well until the mixture is homogeneous .
  3. Sprinkle a mold with a little ground coffee. Pour in the mixture a little at a time with a ladle. Let it cool down in the freezer for at least 4 & # 8211 6 hours .
  4. At the time of serving immerse the mold in hot water for a moment , then unmold the semifreddo and cut it into slices.

After placing a teaspoon of pink sugar in the bottom of a 350ml glass, we mix the coconut milk and finally add 90g of ice. Next, get a shaker in which to shake 40 ml of coffee and the remaining ice cubes: once the procedure is complete, gently pour everything into the glass. At the end, before enjoying it, we can decorate the drink by adding pink cotton candy or some marshmallows, taking care to use a blunt wooden stick.
