I discovered with great interest a safe source of fresh and young spinach at the market and that's how I ended up making gnocchi with spinach. The truth is, I'm a little tired of creamy spinach with egg or risotto with spinach. Looking for recipes, I came across gnocchi that I had never made before, which piqued my curiosity. Plus, the recipe itself is incredibly easy, nutritious and to everyone's liking, even if it's with spinach. However, it seems that there are several types of gnocchi, this recipe with potatoes, being quite recent. The secret to getting fluffy, light gnocchi is, experts say, not to add too much flour and only to boil them until they rise to the surface.
You need about 400g whole potatoes, 1 egg, 150g white flour, sifted, 1 nutmeg powder, ¼ teaspoon salt, ½ kg fresh spinach, 2 tablespoons olive oil, 4 cloves garlic, chopped, 1 pepper flake powder hot, 1 handful of walnut kernels, chopped, salt and pepper to taste, the juice of ½ lemon.
Boil the whole potatoes (some chefs even recommend baking the potatoes to avoid excess liquid) then peel them and pass them well. Add the egg, nutmeg and a pinch of salt, then start to incorporate the flour, gradually, until you get a malleable dough, but do not knead for too long. Place the dough on the floured table and roll it out in a roll about 1cm in diameter. Cut the roll into pieces about 1cm thick. Sprinkle well with flour and let the gnocchi rest on the table while you prepare the spinach.

When the gnocchi rise to the surface (don't cook them more than that, there is no need), take them out with a spatula and put them in the pan, over the spinach. Continue to cook for another 1 minute, adding salt and pepper to taste. Perfect the taste with a little lemon juice.
