Apple cake

First we clean the apples and then we wash them. Peel the apples and remove the middle (seeds and their house). Place on a plate and fill with cherry jam.

Separately take the sugar and place it on the bottom of the pot and place it on the fire to caramelize it and then spread the caramelized sugar on the walls of the pot. Place the apples over the caramel and put the dish in the oven for 15 minutes to soften the apples.

When we have the dish in the oven, we make the top like this: we separate the eggs. Beat the egg whites with a pinch of salt. Beat the yolks with the sugar and then add cold water, mixing well until all the sugar melts and forms like a frothy cream. Add the whipped cream over the yolks and mix gently, adding the flour at the end. Homogenize the composition well, stirring gently from the bottom up so as not to leave

After removing the apples from the oven, let them cool a bit and add the top on top, then bake for 40 minutes on low heat. When the top is baked, remove it and let it cool well, then cut the top in half so that we don't touch the apples.

After cutting, syrup both tops with the syrup I boiled in water with sugar and lemon juice.

Beat the whipped cream separately with the mixer until it hardens. Use a part of the whipped cream to place it between the tops and then join it so that the apples are on top. Garnish with whipped cream as desired and with jellies.
