Easy mini strawberry cream treats recipe

After making Millefeue for a party and somebody tucking into it, I had to whip up something last minute. These went down amazingly and I've had them requested over and over again since. They're so easy, they're the perfect bite sized little treats and you really don't need to be precise with measurements just do it to suit your tastes.

  • 1 pack Store bought puff pastry
  • 600ml tub Double Cream
  • Vanilla Extract
  • Jar of Strawberry jam
  • Punnet of Strawberries
  • Icing sugar


  1. Preheat oven to 180c or less for fan, dust your surface with icing sugar and roll out your puff pastry thinly to approx 1/2 cm thick.
  2. Use a plastic/metal cutter to cut out circles, dust with icing sugar and place them onto a non stick baking tray. Put them in the oven until golden and icing sugar is dissolved. Leave to cool
  3. Empty Double cream into a bowl and whip until thick, add vanilla extract to taste. Cut the strawberries into medium slices.
  4. Pastry circles should be puffed up to a nice size, take them and pull them apart to make a top and bottom
  5. Spread the bottom half with a little of the jam, you don't need a lot. Add a scoop of the cream, pop a couple of slices of strawberry on top and add the lids.
  6. Enjoy!

Make one batch basic sugar cookies and one batch royal icing. You'll need a rectangular cookie cutter, green and pink natural food coloring, powder food coloring, or gel paste food coloring, and small round piping tips.

1. Prepare cookies per recipe instructions.

2. While cooling, prepare royal icing. Transfer half to bowl and thin slightly with water, then transfer to piping bag. Divide remaining icing between two bowls and tint it light green and pink transfer to piping bags fitted with small round tips.

3. Using white icing, outline and fill in the cookies let set. Once set, with colored icing, pipe stems and flowers on each cookie and let set.

Recipe Summary

  • 1 pint fresh strawberries, hulled
  • 1 cup heavy whipping cream
  • 1 tablespoon confectioners' sugar
  • 1 tablespoon chocolate sprinkles

Cut the hulled-side strawberries so they can stand up on a plate. Slice the tip off each strawberry to make the 'hat' set aside.

Beat cream and confectioners' sugar in a glass or metal bowl until soft peaks form. Lift your beater or whisk straight up: the whipped cream will form soft mounds.

Spoon a large dollop of whipped cream on top of strawberry base for the 'face' and 'beard'. Set the 'hat' atop the 'face'. Add a dot of whipped cream, using a toothpick, on top of the 'hat' for the 'pom-pom' and 2 dots on the strawberry base for 'buttons'. Place 2 sprinkles on the 'face' for 'eyes'.

How to Make Mini Strawberry Pies

To make our mini pie shells a little fancier, we used this scalloped cookie cutter.

We used refrigerated pie crust sheets to save some time. They are very easy to use and bake up great. But if you have a good pie crust recipe, that obviously will work too.

Using our scalloped cookie cutter, we cut out our pie shell dough.

Then we gently pressed the scalloped cut out into the muffin tins. Super easy.

We baked the pie shells in the oven according to the instructions on our packaged pie crush dough. This is what they looked like out of the oven.

While the pie crusts cooled, we prepared our fresh strawberries. After washing them, we cut them up into small chunks.

For the strawberry glaze, we blended one cup of chopped up strawberries in the blender, added sugar to taste and 1 tsp of cornstarch and cooked the mixture on medium-low heat until it reduced and thickened.

To assemble our Mini Strawberry Pies, we filled the mini pie crust with cut-up strawberries.

And then we added a spoonful of the strawberry glaze. We chilled the Mini Strawberry Pies in the refrigerator until the strawberry glaze had set.

Finally, we topped our Mini Strawberry Pies with a dollop of whipped cream.

These Mini Strawberry Pies are so easy to make and taste just as good as a regular strawberry pie. These individual pies are great for a brunch or a party. Everyone always loves them.

How to Make Strawberries and Cream Cookies

So let’s talk about these cookies that you need in your face now.

And I mean need these. I am a little obsessed with them.

The dough is a fairly straightforward one, but I played around with some of the ratios of ingredients and believe I came up with the most PERFECT recipe for a chewy, thick cookie. NO cornstarch or chilling needed.

AND I found that even 3 days later they tasted perfect. Pound it!

Start with your dried strawberries…NOT freeze dried, folks…just dried.

They are chewy and sweet, a little like a gummy. I found them in the bulk section of my supermarket, but I’ve seen them at Target near the raisins and all.

Anyhow, I chopped them up into smaller bits.

I also used by beloved mini white chocolate chips…but you could absolutely use regular sized white chips.

I mixed those into the batter.

Now, the batter itself is simple..but I used 1 egg and a yolk to help with the chewy consistency and I also used baking soda AND baking powder. The combination of the two makes these cookies the perfect height and consistency!

I am actually going to try this base dough for a regular chocolate chip cookie base. Can’t wait!

I placed a few chips and strawberries on top of my dough scoops to make ’em purty…

And when they’re baked they will look like this…

Like I said, they are a quick cookie that I couldn’t be prouder of!
