Watermelons

For a start, the melons must be pricked next to the tail, to have a place to pull the brine and place them in the barrel or where you put them, follow the cherry branches that must be placed to keep the peel of the melons hard. Add the carrot and celery cut into strips or rounds, hot peppers, as much as you want, dry dill would be good to place it for the first time at the bottom of the barrel, then among the melons and on top of them. Next are garlic, mustard seeds and peppercorns.

We prepare to put water with salt, to a liter of water a tablespoon of salt for pickles. We make sure that the brine covers the melons. The next day we have to look at them if they have shot more water with salt, we have to be careful to fill them again, so that the melons are not left uncovered, so that they don't catch a flower!

After I put them on, I found out that I could put the gogonele or cauliflower! But it's nothing, I'll know next year !! Tomorrow I will bring some sauerkraut and I will share my recipe!

Autumn is coming to an end or rather, he is trying to convince us that it is coming to an end and I thought it would be time to put my pickles in a safe place. From year to year we already know what pickles we prefer, so we have gathered our supplies for the long winter to come. I bought a big bag of autumn cabbage, about 3 boxes of gogonele and about 20 watermelons. I set to work and cleaned the necessary for the gogonele and melons that I will put together. The pickle recipes that I will share with you below are considered raw, because they are prepared cold.

To a 30 L barrel I added the following ingredients:

Pickled melons and gogonele

  • Servings: 10
  • Duration: 30
  • Difficulty: easy
  • 20 pepenasi
  • 5 kg gogonele
  • 4-5 large carrots (you can add more)
  • 2 celery, roots and leaves
  • 4 bundles of dried dill
  • 100 g of mustard seeds
  • 4 whole donuts
  • 4-5 heads of garlic
  • 1 horseradish root (only one root and no more)
  • 25 L brine (1 tablespoon salt to a liter of water)

I put alternative layers of melons and gogonele, followed by layers of dried dill sticks, among which I sprinkled garlic, mustard seeds, slices of carrots and celery and the four donuts.

Pickled cabbage

  • Servings: 1-2
  • Duration: 3mins
  • Difficulty: easy
  • a bag of autumn cabbage (approx. 25 kg)
  • 1 red cabbage
  • 4 bindings dry dill
  • grains from dried corn
  • 2 whole quinces
  • 100 g mustard seeds
  • 1 tablespoon salt to a liter of water
  • 1 barrel of 30 L

The cabbage is grown on the back and placed in the barrel. All ingredients are placed between layers of cabbage. We pour brine over everything and that's it.

Both are left alone for 2-3 days, after which we will start blowing daily or every other day, using a long plastic tube (which will reach the bottom of the barrel). If we don't do this, the pickles will spoil faster than we could imagine. I use 30 L barrels every year that have handcuffs, because from time to time I turn or shake the barrel in place.

Last year we enjoyed some delicious pickles and we were overly impressed by the pickles and watermelons that had an exceptional taste. For those of you who can buy wooden barrels, these would be ideal. I wish you more work and I am waiting for your favorite pickle recipes!


How do you put these melons and cucumbers in jars?

Jars and lids must be clean, washed and drained. Pickle jars should not be sterilized. At the bottom of each jar I formed a crown composed of sprigs of dill, thyme and a strip of horseradish.

I also put some celery sticks, onion rings and sprinkled mustard & # 8211 powder, in my case. You can put mustard seeds if you have them at hand.

I divided the mix of chopped vegetables between jars and pressed them well. I also introduced strips of horseradish and whole hot peppers on the sides. On top I finished with a wreath of dried dill, thyme, horseradish. You can also put a green celery leaf. There are the 2 jars in front (large and small).

I've always heard that watermelons are very good pickles. The first time I tasted it I fell in love with them. Unfortunately, I didn't find too many melons on the market so I could put more jars.

I wish I could put some melons in it Assorted pickles in brine , but I have to be content with what I have until next year.

Ingredient Walled watermelons

2 kg smaller melons
1.5 kg small gogons
1-2 carrots
1 fir horseradish
hot peppers (optional)
peppercorns
1.5 l apa
60 g of salt
100 g of sugar
250 ml vinegar
1 teaspoon Borken (can be omitted)
1 teaspoon salicyl

Preparation Pickled watermelons

We wash the melons and gogonelele. Carrots are cleaned, washed and cut into thicker slices. Dried dill and thyme are washed and placed on the bottom of the jar (I used a 3 liter jar). If the melons are small, we leave them whole if they are bigger, we cut them in four. In a jar over dill and thyme we put a row of melons, a row of gogonele, a few rounds of carrots, among them we put 3-4 pieces of peeled horseradish, 1 hot pepper which is optional, black peppercorns. We continue to put the ingredients in the jar until they are exhausted and then we go on to prepare the pickling solution that we will pour over the melons and gogonele. Bring water to a boil along with sugar and salt.

When they are dissolved, turn off the heat and add the vinegar. When it is warm, add 1 teaspoon of salicyl and if we have 1 teaspoon of borken (it is optional to use it), mix until it melts and pour the solution into the jar until it is full. Staple and put the jar in the pantry. We will consume this pickle after about 6-8 weeks.

PS. : If you do not want to use preservative then I recommend before you put the melons and gogonele in the jar to sterilize it then after pouring the pickle solution over stapled ingredients and sterilize the jar in a water bath for 20 minutes from when the water starts to give first boil and then put the jar in a warm dunst (between the beds) until the next day.


Watermelons

Choose small melons from the market, which no longer ripen. Wash and put in jars, and among them put cucumbers, gogonele and for flavor celery and horseradish leaves. For each liter of water, add 25 g. Of salt. Boil the brine, leave to cool, pour over the pickles and tie the jars to your mouth.

Put in a cool place and leave to pickle.

Pickled melons are one of the most spectacular Romanian recipes. Pickled dishes were invented for practical reasons, to keep as many vegetables as possible in the cold season. However, today we enjoy the dishes that our ancestors created so skillfully.


What ingredients do we use for the pickled watermelon recipe, cut into slices, in a jar, for the winter

  • vinegar

Cut the watermelon into slices, smaller or larger, as you prefer. I prefer to have the right size, about 1-1.5 cm thick. We also cut the melon, we will first clean the seeds, then we will cut the slices.

I prepared 1.7 liter jars, which I washed and sterilized before.

At the bottom of the jar we place cherry leaves, vine leaves, they will strengthen the melons. You can also add raspberry leaves, horseradish leaves, whatever you have.

We start to place the melon slices over the leaves. We also place the carrot fir trees as a decoration. We also add onions, you can cut it, so that it fits better.

In each jar we put a piece of hot pepper, a clove of garlic cut in half, half a teaspoon of pepper, dried dill, celery leaves.

Fill each jar with warm water, I put about 1 liter of water in each jar.

Pour the water from the jars into a pot, for each liter of water we will put a tablespoon of salt, a tablespoon of powdered sugar, two tablespoons of vinegar and let it boil.

When the brine boiled, we poured it into jars, we placed a metal tray underneath, to attenuate the thermal shock.

Then we put the lids on and tighten them well, turn them upside down and check them for leaks, cover them with thick napkins and leave them like that until the next day.

After 24 hours, we will drain the brine again, bring it to the boil and pour it back into the jars. After another 24 hours, we will put the jars on the table and watch them for a week, so that the lids do not swell.

Gina's advice

If you see that the juice is disturbed or a lid is swollen, immediately drain the brine and bring it to the boil, change the lids, pour over the melons again. It works.

This mixture of watermelon and melon is absolutely delicious. I also put in the can, whole melons, you can see that I left the recipe above.

How to pickle melons?

I didn't have a barrel, and I used a large jar, in which unfortunately I managed to put only one whole watermelon, the rest I had to cut into slices or halves.

Wash all vegetables well and peel the carrot and horseradish.

In my big jar (washed well beforehand) I put slices of watermelon, chopped carrot sticks, horseradish and chopsticks, among the vegetables I put dried dill, whole hot peppers and garlic cloves peeled.

If you put whole melons, then prick them with a spike or a fork near the tail so that the brine reaches the core.

& # 8211 pickled brine

Put salt, water and seeds (pepper and mustard) in a saucepan, then put the mixture on the fire until the liquid boils.

The jar is placed in a tray (or on another metal surface) and the brine is poured into the jar over the melons, covered with a plate and waited 1-2 hours, then filled with brine, then close the container tightly in who put the watermelons to pickle.

Try to use coarse salt never before when preparing pickles, because it holds much better. You will most likely find salt in the market (and even in some stores) during the autumn. As far as I know, it is forbidden to sell salt in stores (except for Plafar type), I think it is a European directive in this regard, and therefore it is more difficult to find salt in hypermarkets.
