1 cup demerara sugar
Bring sugar and 1 cup water to a boil in a small saucepan, reduce heat, and simmer, stirring occasionally, until sugar dissolves. Let cool, then transfer to an airtight container. Cover and chill.
Syrup can be made 1 week ahead. Keep chilled.

8 Simple Syrup Recipes for Your Home Bar
Like how a pinch of salt added to any meal can help flavors shine, a little sugar in a cocktail can be transformative. In fact, sugar is one of the 4 key ingredients in an Old Fashioned, which helped define all cocktails. Sugar adds depth, smooths harshness from citrus and ethanol, and can give a cocktail a silky mouthfeel. Adding granulated sugar straight into your shaker or mixing glass, however, is almost guaranteed to disappoint. In cold liquids and alcohol, sugar has a tough time dissolving properly. Hence the need for liquid sugar, commonly known as simple syrup.
If you've never made simple syrup before or are intimidated with anything having to do with a stovetop, you may be tempted to go out and buy a bottle of simple syrup from the store. Don't. It's typically more expensive pre-made, and drastically limits your flavor and sugar concentration options. We'll walk you through how to make 8 easy & essential simple syrups perfect for your home bar.
Make a Simple Syrup for Cocktails, Coffee, and Other Drinks
Simple syrup is, as the name implies, very simple to make from scratch. It's also the most budget-friendly drink sweetener you'll find, costing just pennies per batch. Also known as "sugar syrup," the only ingredients you need are sugar and water, so anyone can do it.
Once you learn how easy it is, you'll discover just how essential it is to keep simple syrup in stock for your bar and kitchen. It's found in many mixed drink and cocktail recipes, and you can use it to sweeten your coffee, tea, and homemade lemonades and sodas. Since the sugar is already dissolved into the syrup, it's much easier to mix into cold beverages.
There are two primary simple syrup ratios. Rich simple syrup means that you're using more sugar than water to create a richer syrup. It has a 2:1 ratio and is sweeter and thicker. You can also make a simple syrup with equal parts (1:1) of sugar and water. It will be a little thinner, and it will add just a touch of sweetness to your drinks. The 1:1 syrup is nice for flavored syrups and primarily used by bartenders, so many cocktail recipes assume that's what you're using. If you prefer a rich syrup, know that you'll likely want to use about 1/4 ounce less than what the drink recipe calls for.
With either option, the recipe will yield between 1 cup and 1 1/2 cups of syrup. You can make as small or as large a batch as you wish, just keep the same proportions. Once done, store it in the refrigerator in a well-sealed bottle where it will keep for up to a month.

1 oz Bulldog Gin
Build over ice in a rocks glass. Stir for 15 seconds. Garnish with an orange peel or slice.
Mix both ingredients together and pour over ice. Garnish with slice of orange
1 oz Campari
1 oz 1757 Vermouth di Torino Rosso
1 oz Russell's Reserve 10-Year-Old Bourbon
Orange slice, for garnish
Combine bourbon, vermouth and Campari in a cocktail shaker. Fill with ice and shake vigorously until outside of shaker is frosty (about 30 seconds). Strain into a chilled rocks glass over large ice cube. Garnish with orange slice.
1 part 1757 Vermouth di Torino Rosso
Build all ingredients in a glass with ice and garnish with an orange slice.
2 oz pisco
1 oz lime
.75 oz passion fruit syrup
.5 oz Campari
Pinch of maldon salt
Combine all ingredients in a shaker tin with ice. Shake and double strain into large coupe. Rub a mint leaf on the rim of coupe and discard. Garnish with rosemary and an edible flower.

3 dashes Orange bitters
Sparkling Yes Way Rosé to top
Olives to garnish
Orange peel for garnish
Fill a rocks glass with ice. Add Campari and fill with sparkling rosé. Top with a few dashes of orange bitters, orange peel and olives on a pick.
1 oz Campari
1 oz Smith & Cross Jamaican rum
1 oz Carpano Antica sweet vermouth
Combine all ingredients in a mixing glass and stir briskly until just cold. Strain into a rocks glass over fresh ice. Garnish with an orange twist, expressed and inserted.
.75 oz Campari
.75 oz Dolin Rouge
.5 oz Plantation Pineapple rum
.5 oz Cruzan Blackstrap rum
Combine ingredients with and stir with ice. Strain into a rocks glass with a large ice cube.
1 oz Pig's Nose Scotch
1 oz Punt e Mes sweet vermouth
1 oz Campari
1 oz Stone Smoked Porter
Stir together the scotch, vermouth and Campari and strain over rocks. Add the smoked porter and stir again to incorporate. Garnish with an orange peel.
2 oz blood orange juice
2 oz Campari
.5 oz rosemary demerara simple syrup*
Mix the blood orange juice, Campari, and rosemary demerara simple syrup into a pot. Heat, bringing to a boil for 5 minutes while stirring constantly. Cool and refrigerate. When ready to serve, pour into champagne flutes and top with sparkling wine.
*Rosemary Demerara Simple Syrup: Pour the .5 gallon water and 1 gallon demerara sugar into a saucepan. Heat the ingredients until dissolved. Stir until the liquid becomes completely clear, then remove from heat source. Add 5 rosemary sprigs into the simple syrup for flavor right as it comes off the burner. Let sit until cool. Remove rosemary sprigs from simple syrup and store for up to 3 weeks.
