Chicken wings with Hoi Sin sauce

It is a very popular dish in Cantonese restaurants. Hoi Sin sauce goes perfectly with soy sauce and honey. The recipe is quick, and the taste absolutely delicious, sweet-salty and aromatic.

Ingredient:

  • 12 chicken wings, with your wings cut off
  • 2 teaspoons cane sugar (or brown sugar)
  • 1 tablespoon dark soy sauce
  • 2 tablespoons light soy sauce
  • 1 tablespoon rice wine
  • 300 ml of sunflower oil
  • 2 cm piece of ginger, finely chopped
  • 2 green onions, finely chopped
  • 2 green onions cut into pieces, diagonally
  • 2 tablespoons Hoi Sin sauce

  • 1 tablespoon honey
  • 100 g mixed salad leaves

Mix the sugar with the two types of soy sauce and the wine in a bowl. When the sugar has dissolved, add the chicken wings and mix well. Leave to marinate in the refrigerator, with the bowl covered, as long as possible, but at least 1 hour, stirring occasionally.

Remove the wings from the marinade (keep the liquid). Heat the oil and fry the wings for 2-3 minutes, in tranches, until golden brown. Drain oil on paper towels.

Drain the oil from the wok, keeping about 1 teaspoon. Add ginger, green onions and Hoi Sin sauce. Stir-fry the ingredients for 30-40 seconds.
Add the wings and marinade. Mix well.

Add the stock and bring to the boil. Reduce the flame, cover the wok and boil the wings for 5-6 minutes, stirring occasionally.
Remove the lid and increase the flame. Reduce the sauce until it becomes thick and sticky. Add the honey and mix well. Serve the hot wings, garnished with green onion pieces, along with lettuce leaves.

The fins can be served hot as well as at room temperature.

Hoi Sin (or Hoisin) sauce is found in Carrefour and Mega Image.

Palm sugar can be found in Chinese grocery stores and delicatessens.

Brown sugar, light and dark soy sauce can be found in almost all supermarkets.

If you want a little hot, you can add, & icirc together with ginger and chopped green onions, and 1/2 chopped hot pepper, or 1-2 teaspoons of hot pepper paste.

6. Bake them for 30-40 minutes in the preheated oven to 200 ° C.


Method of preparation

After you have prepared all the ingredients, it doesn't take you more than 15 minutes to cook the added barbeque sauce over the chicken wings.

Wash the meat very well and sprinkle it with lemon juice when rinsing. After that, follow the steps below:

  1. Finely chop the onion and garlic.
  2. Put the butter and olive oil in a pan. Add the onion and garlic and cook over medium heat.
  3. After the onion and garlic have taken on a brownish hue, add the other ingredients, in addition to the wings, salt and pepper. Stir constantly.
  4. Add salt and pepper to taste.
  5. Let the mixture boil for 20 minutes, until the sauce decreases and thickens.
  6. Prepare a baking tray and place the wings in it. Add a small amount of salt and pepper on both sides.
  7. Using a brush, grease each wing with the prepared sauce. Be careful not to finish it all, because you need it later.
  8. Put the tray in the preheated oven at 180 ° C and let the meat bake for 20 minutes.
  9. Add the barbeque sauce on one side of the wings, then turn them over and add the sauce on the other side. Leave them in the oven for another 10 minutes.
  10. Turn them on the other side and add another layer of sauce.
  11. Let them bake for another 5 minutes and you're done!

  • 1 kg chicken wings
  • 2 onions
  • 400 g diced tomatoes

  • 1/2 glass of wine
  • a few tablespoons of oil
  • 2 cups chicken soup or water
  • polenta to serve

Super crispy chicken wings

As in the sciences and in the gastronomic universe, in addition to "dishes" in the broadest sense, there are those dishes that awaken in us various feelings or pleasant memories, which link us to history, childhood, the time when we jumped the school fence or when I was breaking windows or maybe a vacation. "Comfort food" is the general term used and accepted to describe these culinary experiences - their analysis is totally subjective, in the sense that the polished concrete after two days can create an epiphany for some, and for others the mother's stuffing or the hamburger from semi-prepared foods. In any case, everyone is right.

I don't personally know the one who invented the expression, but I'm sure he didn't refer to the basic meaning of the word "comfort", because honestly, it would be quite difficult for me to live and sleep in the same bed with the piece. of polenta in ideal conditions of comfort (and mental health).

In my case, the chicken wings fit the term explained above perfectly (without the bedside part). The wings are just like the seeds - you cook a lot, put them in a big bowl and bale unknowingly, losing touch with reality. Let's not dwell on the philosophy of the wings - I took 10 pieces, I put them in cold water with a large spoonful of coarse salt, I left them for 30 minutes, I washed them with salt water and I wiped them well all. After I took them out, I put them on a napkin to draw the excess oil. Then I greased them with a brush with a little honey and put salt and freshly ground pepper.

I made the sauce from a cup of concentrated tomato paste (dense, not liquid), 2 tablespoons soy sauce, 2 teaspoons sugar, a tablespoon of vinegar, half a dried hot pepper (you can put as much as you want) and two tablespoons of water. Boil for 5 minutes to bind and allow the vinegar to reduce. It's genius! And super simple!

I ate them with parsley salad (well, who eats salad when you have so many wings). If you don't want them made in oil (although the texture is spectacular), put them in the oven at 200 degrees on a grill until they are crispy, then follow the same steps.


Crispy chicken with garlic sauce

  • 10 chicken wings
  • 4-5 cloves of garlic
  • 1/2 cup turns white
  • basil
  • thyme
  • 150-200 ml frying oil

Special garlic sauce

  • 500 gr. - Greek natural yogurt (10 - 15% fat)
  • 2 cucumbers (about 300 gr.)
  • 1 small link - parsley
  • 1 clove of garlic
  • 1 tablespoon - olive oil
  • 1-2 tablespoons - freshly squeezed lemon juice
  • sare & amppiper

Clean the wings well and sprinkle with salt and pepper.

Peel a squash, grate it and chop it finely. Put the oil on the fire as small as possible in a pan (to reach 1/2 of the thickness of a wing) and add the chopped garlic for 2-3 minutes.

Strain the garlic (don't throw it away!) And let the oil continue to heat over medium heat, then add all the wings at once. Fry the wings for 7-10 minutes, until well penetrated.

Towards the end, add the chopped garlic back in the pan and turn off the wings with the white wine. Sprinkle the wings with rosemary and thyme, then serve with a homemade garlic sauce.

Special garlic sauce

First of all, peel the cucumbers. Then grate the cucumbers in a bowl, then add a little salt on top and set aside for about 10 minutes.

After 10 minutes the cucumbers will leave liquid, put them in a napkin and drain the liquid well. Take another bowl and put the Greek yogurt in it, grate the garlic on a small grater, add the cucumbers and the finely chopped dill.

Pour a little olive oil on top and the freshly squeezed lemon juice. Season with salt and black pepper, mix everything together, taste and see if you need to add something else. I added a little more salt and a little lemon juice.
