With the start of kindergarten or school, all mothers become more attentive to the child's diet, trying as much as possible to offer healthier alternatives.
You have probably heard of the site , a site where you can find an impressive baggage of information about raising a child, about the family and many other aspects related to the child's evolution.
Some time ago I had the honor of being invited to participate in the project "Recipes for healthy children" so I follow this invitation with a menu for children.

Tart with eggs, tomatoes and cheese

What could you want more than to give your child eggs, cheese, tomatoes for breakfast? Combine them in a delicious tart, and especially healthy, being prepared in the oven, to diversify breakfast and get out of the daily routine.

4 eggs
2 large tomatoes
200 gr telemea

Chop the chicken breast and mix with the rice previously soaked in a little water, egg, 1/2 of the finely chopped parsley and salt and nutmeg. Mix the ingredients well until the composition is homogeneous.

We put on the fire a pot of water in which we add a little salt. When the water boils, add the meatballs and let them boil.
Heat the milk in a saucepan and add an onion and a few bay leaves. Bring the milk to near boiling point, without boiling, but remove the onion and bay leaves and set aside.
In another pan, melt the butter, then add the flour and mix continuously until incorporated, being careful not to burn.
Set aside and add the milk little by little, stirring constantly with a fork or a wooden spoon. after the composition has become homogeneous, without lumps, put it on the stove, over low heat and boil until it reaches the consistency of a sauce.
Season with salt and pepper, add the meatballs and bring to a boil.
Serve with finely chopped green parsley. Snack

Dessert with yogurt and peaches

After a good night's sleep, you can give your child a delicious dessert. A dessert can be delicious and healthy at the same time, and for that I recommend the dessert with yogurt and peaches: biscuits, fruit yogurt, peach compote, all combined in an irresistible cake!

2 peach yogurts (800 ml)
1 peach compote (400 ml)
250 gr sweet cream for whipped cream
1 packet of biscuits
10 gr gelatin

Mix the sweet cream for the whipped cream until it becomes firm.
Add the yogurts and continue beating. Then add two or three peaches from the compote, cut into cubes. Dissolve the gelatin in a few tablespoons of compote and put it on the fire for a few seconds until it melts. Be careful not to bring it to the boil because it loses its properties. It is incorporated in the composition.
Place the slices of peaches on the bottom of some containers. I used disposable containers to make sure I could take out the cake without damaging it.
Pour the composition over the peaches then place it on top of the biscuits soaked a little in the compote juice.
Refrigerate for at least two to three hours, then turn over carefully, so as not to break, on a plate and cut into slices.

Puree mousse with chicken

Try to give the baby dinner for a maximum of 2 hours before bedtime, so that he has time to digest it. In order for him to rest well, offer him something easy, but at the same time full.

1 chicken breast
1 kg of potatoes
2-3 tablespoons butter
1 glass of milk
1 red bell pepper
200 gr cheese
1 onion

Prepare the mashed potatoes, butter and milk.
Finely chop the onion, chop the pepper into cubes. Grate the cheese and add the chicken breast to the mincer (or food processor).
Saute the onion in a tablespoon of butter just enough to soften it a little and add the chicken breast, peppers and half the amount of cheese. Mix until the composition is homogeneous.
In a tray lined with baking paper, place half of the puree and level evenly over the entire surface.
Put the meat filling on top.
On top add the rest of the puree, sprinkle slices of bell pepper (I preferred red for the look, but you can put whatever you want), then sprinkle the rest of the cheese.
Put in the oven on the right heat for about an hour, then let it cool a bit so that it can be cut nicely.

Coffee cake

The first time we make the countertop, it is a countertop similar to the rolling countertop.

Mix the egg whites with a pinch of salt, then add the sugar, then put the yolks one by one, stirring from top to bottom.

With the remaining cream, decorate the cake and decorate with hazelnuts and coffee beans.

Refrigerate the coffee cake for a few hours. It is ideal to cut it the next day, if we still have patience and resist lust.

Beat the whole cream (400 ml) with the 150 gr of sugar. Let it cool. Put the gelatin soaked in 20 ml of cold water.

We heat the tangerine juice. Beat the yolks with the sugar until they turn white, then add the starch and mix well with the whisk.

When the juice is hot, without boiling, add it over the yolk mixture.

We put it back on low to medium heat, stirring constantly with a wooden spoon until it starts to thicken.

Take it off the heat, let it cool for 2-3 minutes and then add the gelatin, mix well.

Let cool for 15-20 minutes. We incorporate whipped cream in 3 stages. Remove the top with chocolate mousse, lightly place the tangerine mousse, then leave the cake overnight in the refrigerator.

The decoration for the Fluturas cake

For decoration we use tangerine slices that we place in the shape of a butterfly, then with a pos we draw the points and the antennas with melted chocolate.
