Sausages and Onions and Apples

We make quick skillet meals like this one of sausages with onions and apples (and sometimes pears) when we are short on time and have either our own fresh sausages on hand or good ones that we buy. If the market is good, it usually has a nice selection of fresh sausages.

Ingredients

  • 2 tablespoons olive oil
  • 4 small yellow onions, halved lengthwise
  • 8 fresh sausages, pricked
  • 4 small apples, peeled, cored, and quartered
  • Salt and pepper
  • Fresh sage, optional

Directions

Heat the oil in a large heavy skillet over medium heat. Add the onions cut side down, cover, and cook until just tender and browned on the bottom, about 15 minutes.

Tuck the sausages and apples around the onions in the skillet. Season with salt and pepper. Use two skillets if everything is too crowded together. Cook over medium heat, turning the sausages and apples as they begin to brown, but leaving the onions in place. Take care to leave the onion halves whole. Continue cooking until everything is nicely browned, then reduce the heat to medium-low.

Cover the skillet and cook until the sausages are cooked through and the apples and onions are tender, 5–10 minutes. Adjust seasonings. Serve garnished with fresh sage, if you like.

Preheat oven to 425°F. Insert 2 skewers into sausage coil in an &ldquoX&rdquo shape. Place sausage coil in middle of a large rimmed baking sheet. (If using links, arrange in a single layer on baking sheet.)

Toss together apples, onions, thyme, olive oil, garlic, and lemon zest in a large bowl season with salt and pepper. Scatter apple mixture around sausage on baking sheet. Roast in preheated oven until sausage is cooked through and apples are tender but not falling apart, about 25 minutes. Remove skewers, and cut sausage into large pieces. Sprinkle with parsley, and serve.

  6. Add onion and apple to pan cook until onion and apple are tender and brown, stirring often, about 5 minutes.
  7. Add apple cider and chicken broth increase heat to high and stir until liquid is reduced and thickened slightly, about 2-3 minutes.
  8. Stir in lemon juice.
  9. Season to taste with salt and pepper.
  10. Remove sausages from oven and transfer to serving platter.
  11. Remove pan from heat.
  12. Whisk sage and remaining 2 tablespoons of butter into cider mixture.

Drizzle over sausage, serve and add this to your repertoire of fabulous meals!

Baked Sausages with Apple and Red Onion

A good quality sausage is one of the easiest ways to make a delicious meal and this recipe for Baked Sausages with Apple and Red Onion is a quick and easy way to a family dinner packed with flavour.

Add even more mid-week winter comfort and enjoy this no-effort meal with a bottle of La Motte Syrah 2017, a wine that pairs well with rich, flavourful dishes, each glass’ abundant fruit latching onto the sweetness of the baked apples and the richness of the sausages.

The recipe is based on a recipe from Diana Henry’s cookbook, Simple, a book I refer to often for its easy but flavourful recipes. It is not a surprise the book was awarded winner of The Fortnum & Mason Cookery Book of the Year Award in 2017. Pork goes well with some sweetness and the baked sweetness of the apples and red onion is a delicious combination here with the pork sausages. It really is essential that you use top quality pork sausages stuffed with the proper, real meat in a dish like this with so few ingredients, the flavour and end result will be unbeatable.

I served the Baked Sausages with Apple and Red Onion with crushed baby potatoes roasted (season well with some ground black pepper to match the Syrah) at the same time in the oven. Sautéed Sausages with Apples

Ingredients US Metric

  • 1 pound sausage links or bulk sausage, preferably Italian
  • 2 medium (about 1 lb) red cooking apples, such as Gala or Honeycrisp

Directions

In a large skillet over medium heat, fry the sausage until cooked through, with no trace of pink remaining, 5 to 10 minutes for bulk sausage or 15 to 25 minutes for sausage links.

Meanwhile, core and slice the apples into wedges 1/2 inch (12 mm) thick.

Add the apples to the skillet containing the cooked sausage (or remove the sausage if there’s no room) and sauté until the apples are browned and tender but not mushy, 5 to 10 minutes.

Transfer the sausage and apples to a plate lined with paper towels to drain. Serve hot.

ADD EXTRA VEGETABLES

You can bulk up this simple meal (and clean out your crisper) with the addition of extra vegetables. Sauté onions or cooked potato cubes with the sausages and apples, or add mushrooms, broccoli rabe, or Brussels sprouts to the skillet when you add the apples.

This sautéed sausage with apples is a quick and easy last-minute dinner. This satisfying and tasty dinner will be ready to eat in less than a half hour. What could be easier than a 2-ingredient dinner? Add other vegetables, if you desire, but really, none are necessary.

I used sweet Italian sausage and Honey Crisp apples. My only deviation to the recipe is that I would add the apples to the sausage before the sausage was completely cooked. It took about 15 minutes to cook my chubby sausages then another 10 to sauté the apples. Next time, I will cook the sausage for about 5 minutes, then add the apples so all will be cooked in approximately 15 to 20 minutes.

This recipe serves 3 with nothing else served. Next time I make this, I will add a sliced onion when I add the apple for additional flavor.

I decided to add a few other vegetables which turned the dish into a delicious one-pot meal. This included sliced red potatoes, sliced sweet onions, and broccoli rabe—the perfect vegetable complement to Italian sausage. With or without the extras, this recipe makes an ideal cold weather dish. The sweetness of the apples provides a counterbalance to the spice of the sausage and the bitterness of the broccoli rabe.

I used Gala apples. I fried the sausages for 10 minutes and removed them from the pan. Then I cooked the potatoes and onions in the fat and then removed them and set them aside. Next, I sautéed the apples and broccoli rabe separately for 10 minutes each and added back the sausage, potatoes, and onions to complete the dish.

There was no need to drain the sausage or any of the other ingredients. A little salt added to the dish would help to boost flavor. Serves 4 or more if you add some of the suggested vegetables.

This recipe was a hit with our family. I sautéed the Gala apples (skin on) with a bit of sliced onions. Our sausages were a flavorful Cajun style by our local butcher. The sausages happily sautéed along with the apples and onions for about 20 minutes. Talk about dinner in a flash. A perfect speedy weeknight dinner.

This recipe is exactly as described: a nice, easy-to-prepare meal that’s good for those stay-at-home evenings when you just want to kick your shoes off and eat in front of the fire.

Best of all, it’s a good basic recipe that you can doctor to suit whatever you have in the house.

I made it twice, once just the very basic recipe as written and the second time with the addition of onions and potatoes. I almost always have cooked potatoes hanging around the house. I find home fries can make a breakfast filling and a dinner rounded out.

This recipe can also be cut in half. That works for those nights when you're standing in front of a refrigerator feeling sorry for yourself because you have to eat alone and you are contemplating a frozen dinner. This cooks almost as quickly and is much more satisfying for both the stomach and the soul.

I used bulk mild Italian sausage both times I made the recipe. My Gala apples were just under a pound for the two of them. When I added onions, I chopped up about half of a small yellow onion and browned it with the sausage. The potatoes I had on hand this week were Russet and I added about a pound.

Makes 2 servings if you're hungry and 3 if you are all light eaters. This also depends on what and how much you find sitting forlornly in the refrigerator and toss in.

I scaled the recipe down to 4 sausages, 1 onion, & 3 small apples, but used the full amount of butter/vinegar/brown sugar. This was so tasty. I was looking for a quick supper and a little something different. did a search for sausages (because that's what I had out of the freezer) and what a pleasant surprise. We really enjoyed this recipe and will make again often. A perfect little weeknight fall supper.

I thought this was delicious. My husband thought the apples tasted "funny". I'll give it a 3 as an average score. I used a chicken and apple sausage for the dish, I also think the apple and onion would go great with pork chops! Be sure to cook the onion and apple mixture at a high enough heat that it caramelizes rather than just boils down. I think mashed potatoes would be a good side with this.

Hubbie and I thought this was yummy. I used pre-cooked kielbasa, so skipped the boiling, and just added it sliced up into the apple/onion mixture after it caramalized.

I have made this two times. The first time I used bangers and followed the recipe, except I split open the sausages before placing them under the broiler. I liked it alot but my husband thought it was too appley. The SECOND time I made it I used brats and 3/4 of the reccommended apples. I boiled the brats in dark beer instead of water and split them in half before placing them under the broiler. I really enjoyed this but I made a few alterations. I used sweet italian sausages, granny smith apples, red wine vinegar & I was out of brown sugar so I used 5 tbp. red wine vinegar, 5 tbp. sugar & 1 tbp. molasses. I broiled the sausages & then sliced them on a diagonal & added them to the apple & onion mixture for a couple of minutes to coat w/ the sauce. Very good! yummm. I really like this fall themed recipe. I live in Germany so apples and sausage is in no short suppy and am always looking for delicious recipes that include both of them. Anyways I made a few little changes, I cooked the sausages in beer and then cut them lengthways and turned the heat up high which allows the beer to carmelize and crisps the outside of the sausages.
