  • 1 orange, finely grated zest and 4 tbsp juice
  • 500g cottage cheese
  • 2 red dessert apples
  • 200g blueberries
  • 16 ready-to-eat dried apricots, finely chopped
  • 2 celery sticks, finely chopped
  • 150g mixed salad leaves
  • 2 kiwi fruit, peeled and sliced
  • 2 nectarines, stoned and sliced
  • 4 tsp sesame seeds, toasted (optional)

  1. Mix the orange zest into the cottage cheese. Core and dice the apples and mix with the blueberries, apricots and celery in a large bowl.
  2. Divide the salad leaves onto 4 serving plates. Top each mound of leaves with equal portions of kiwi fruit and nectarines and sprinkle each one with 1 tbsp orange juice.
  3. Share out the cottage cheese and fruit mixture onto the plates and sprinkle with sesame seeds.


*The variations on this are only limited by your imagination – cherries, grapes, mangoes, orange segments, peaches, raspberries, strawberries and dried fruits such as figs, raisins and sultanas, are all suitable. *If some of the fresh fruits are not in season, use fruits canned in juice, such as pineapple chunks, peach slices or apricots to make up a good variety.

– 1 orange, zest finely grated and juiced to yield ⅓ cup (about 80 ml) juice
– 2 ¼ cups (about 500 g) cottage cheese
– 2 red apples
– 1 ¼ cups (about 200 g) blueberries
– 16 dried apricots – finely chopped
– 2 celery stalks – finely chopped
– 150 g mixed salad leaves
– 2 kiwifruit -peeled and sliced
– 2 nectarines – stoned and sliced
– 1 tablespoon sesame seeds – toasted (optional)

Cottage Cheese Fruit Salad

This was one of my roommate Kim’s favorites back in college. I grew up with my Grandma’s Cottage Cheese Salad, that is loaded with veggies, so this was new to me. From the first bite I was hooked. Not only is this a cinch to make, it’s darn good too. Bonus, it’s budget friendly and a healthy, satisfying meal for penny pinching college students.

To make, simply top cottage cheese with your favorite fruit – you can use fresh or canned. Top with strawberries, peaches, pineapple, pear, blueberries, cantaloupe, kiwi and more. Fruit cocktail is my favorite, followed by peaches.

Twenty plus years later, I am still enjoying this light and refreshing salad. Moving to Georgia, this will be on regular rotation during the hot summer days.

Healthy Recipe: Grilled Chicken and Cottage Cheese Asian Summer Salad with Sweet Chili Dressing

Grilled chicken healthy recipe:


Chicken drumstick (depending on how many people are around the table, aim for at least 2 drumsticks per person)

  • 2 TBSP Nuoc Cham dipping sauce
  • 2 TBSP Dijon Mustard
  • Salt and pepper
  • 1 TBSP olive oil

It’s better to season the meat at least 12 hours in advance. It will be juicier.

Grill for at least 20 minutes or until it is no longer pink!

Cottage cheese summer salad recipe with sweet chili salad dressing

I discovered cottage cheese a few weeks. I have never paid attention to this cheese as I did not like the texture and did not know how to use it. Until one day, I saw one of my friends adding it to her salad. I thought it was a nice twist to the recipes and it added a healthy spin to them. As much as I love cheese, I try not to eat them regularly as they can have lots of fats. But with the cottage cheese, I am guilt free (or almost).

Ingredients for this healthy recipe

  • Lettuce washed and shredded
  • 1/4 cup of cherry tomatoes diced
  • 1 cucumber washed and sliced
  • Optional: I added a kiwi
  • 1 cup of cottage cheese
  • 2 to 3 TBSP Blue Dragon Sesame Oil
  • 2 TBSP Of Sweet Chili Dressing
  • Salt and pepper

Nothing easier than preparing a summer salad: toss all the ingredients and top with the dressing. I like stirring the cottage cheese into the salad. It adds a refreshing taste and consistency to the salad.

My mother would make this Strawberry Fluff Cottage Cheese Salad when I was growing up. This is about the only way you would ever catch me eating cottage cheese. The strawberry gelatin, strawberries, and whipped topping are excellent at concealing the loathsome, but healthy, cottage cheese. Substituting low fat and/or sugar free ingredients can make this light and fruity dessert a healthy option, too.

This is one of those desserts that’s hard to mess up. The one thing that will mess this recipe up is using a frozen strawberry product without straining the liquid. Please remember to strain your strawberries if you use frozen strawberries. You can easily by-pass this issue altogether by slicing fresh strawberries.

In a nice and large bowl, combine the cottage cheese, whipped topping (like Cool Whip), strawberry gelatin powder, and sliced strawberries. Stir it until all the ingredients are well combined. That’s it! Pretty simple, huh?

Mandarin Orange Fluff Jello Salad Recipe

I know, I know, but they are just so good! Mandarin oranges are one of my favorite fruits, but so often the labels aren&rsquot clear and you&rsquoll find the fruit comes from all around the world and you never really know if they are seedless are not.

And honestly, for such a small fruit, it can have a lot of seeds that are just a pain. So, I buy Halos, because I know where they&rsquore coming from &ndash California right here in the US, and they are seedless so I don&rsquot have to worry about chomping down on a seed and taking away from the delicious flavor that is a mandarin orange. It&rsquos also comforting that they&rsquore GMO-free.

While I love eating fresh mandarin oranges as a snack, I like to try my hand at cooking with them every now and then too. I was recently invited to make a recipe with Halos and the recipe that immediately came to mind was an oldie jello salad I fondly remember my mom making for cookouts and all the family gatherings.

It&rsquos an odd salad that you wouldn&rsquot even really think about combining the ingredients for, or at least I wouldn&rsquot. I hadn&rsquot had it in years so I couldn&rsquot resist giving it a try.

Mr. Savvy, who spent the first several years of his childhood in Germany, might as well looked at me like I had snakes coming out of my head when I asked if he had ever had the strange concoction.

Canned mandarin oranges, cottage cheese, orange gelatin, canned pineapple and whipped topping make up the original recipe my mom would make. However, I decided to make it a bit more fresh and natural by using fresh mandarins and making my own whipped cream.

The resulting mandarin orange fluff jello salad tasted just like I remembered. A little sweet, creamy, and full of citrus flavor.

It has a variety of textures from the whipped cream, fruit, and cheese. If you want it to be purely smooth, you can run the cottage cheese through the blender before mixing it in and if you want some crunch, you can top with a sprinkle of chopped pecans.

The salad is great especially during the summer months at cookouts. I also like it as a dessert option during the holidays. It&rsquos a nice light, refreshing end to a heavy meal.

Fruit Filled Summer Salad


  • 1 cup diced Pineapple, fresh
  • 1 cup of sliced Strawberries, fresh
  • 1 cup of Blueberries, fresh
  • 1 cup of naval orange, peeled and diced
  • 3/4 cup honey goat cheese, finely chopped
  • ½ cup finely chopped pecans (optional)
  • 5 oz. container of spring mixed green salad mix


Place half of the greens in a bowl and top with ¼ cup of the pecans, 1/4 cup of the goat cheese, ½ cup of the blueberries, ½ cup of the strawberries, 1/2 cup of the oranges & ½ cup of the pineapple.

Add the remaining greens on top & then add the additional fruit, goat cheese and top off with the remaining chopped nuts.


Why Naval Oranges? There are NO seeds within the fruit = no need to spend time removing seeds. I LOVE a shortcut/timesaver no matter how small.

Chopped Nuts: In the baking aisle you can find chopped pecans so that you can sprinkle them on top no chopping time required!

Honey Goat Cheese? Typically honey goat cheese can be located within the specialty cheese display at your local supermarket.

Prep Ahead: Make sure all of your fruit is properly washed before using. Hull the strawberries before slicing.

Purchase a Pre-Made Salad Dressing: If you’re looking to save on time, my pick for a dressing is a poppyseed salad dressing. In fact, I love some of the poppyseed combos found in the cooler area located in the produce aisle at your local supermarket.
