Fluffy egg white check with apricot jam

Preheat the oven to 160 °.

Careful! The egg whites should be close to room temperature to increase their volume and get a fluffy cake.

Beat the egg whites with a pinch of salt.

Gradually add the sugar and vanilla sugar, stirring constantly.

Add the milk and oil.

Sift the flour, mix with the baking powder and add gradually, mixing gently with a spatula and mix well.

The obtained composition is put in a larger cake form or in a cake form, lined with baking paper or greased with oil and lined with flour.

Put a few teaspoons of jam on top, from place to place.

Put the tray in the oven for 35 minutes.

Careful! Do not open the oven door for the first 20 minutes.

The toothpick test is done. When the toothpick stays clean, it's ready.

Allow to cool, then cut.
