Pancetta Green Beans

Ingredients

  • 12 ounces green beans, trimmed
  • 3 ounces pancetta,* coarsely chopped

Recipe Preparation

  • Cook beans in large pot of boiling salted water until crisp-tender, about 4 minutes. Drain. Transfer to bowl of ice water; cool 5 minutes. Transfer beans to paper towels and pat dry.

  • Heat large skillet over medium heat. Add pancetta and sauté until crisp, about 3 minutes. Using slotted spoon, transfer to paper-towel-lined plate to drain. Increase heat to medium-high. Add butter to same skillet. Add beans and stir until heated through, about 4 minutes. Season with salt and pepper. Stir in pancetta.

Romano Beans With Pancetta & Tomatoes

Green beans are always a great vegetable side dish since most people are familiar with them and I do not think I’ve ever met a person who didn’t care for green beans despite the fact that they may think of beans as a boring vegetable. Properly cooked and seasoned however, green beans can be a wonderful addition to any menu and anyone can turn ordinary green beans into an extraordinary vegetable side dish.

My favorite variety of green beans are these meaty Romano beans that grow really well in our garden. They are full of flavor and can be seasoned with a variety of herbs, or combined with other vegetables. On my frequent market visits, I often buy a bag of these beans and then use whatever ingredients I have in my refrigerator to flavor them. For this recipe, I had some cherry tomatoes that were getting too ripe for salads and some diced pancetta I needed to use up and ended up with a great tasting bean side dish I served to guests with a lovely roast of pork.

Recipe Summary

  • 2 slices pancetta or bacon, chopped
  • 1 ½ tablespoons olive oil
  • 1 small red onion, chopped
  • 3 cloves garlic, crushed
  • 1 bunch kale, roughly chopped
  • 1 bunch beet greens, roughly chopped

  • 1 (15 ounce) can cannellini beans, drained

Microwave the chopped pancetta or bacon on high for 3 minutes. Drain the drippings, and set the crispy pancetta aside.

In a large frying pan, heat the olive oil over medium heat. Cook onion in oil until soft. Add the crushed garlic cloves, and cook a minute more. Stir in chopped greens, and season with salt to taste (be conservative at this point - you can always add more!). Partially cover the pan, and cook until the greens begin to wilt. Stir in crispy pancetta and cannellini beans. Cook partially covered for 5 more minutes, until the flavors have combined and the greens are tender.

Cook pancetta in a large skillet over medium-high heat until crispy, then set aside. Reduce heat to medium, stir shallots into the pancetta fat, and cook gently until the shallots have turned dark golden brown, about 10 minutes. Place pancetta and green beans in skillet toss and cook until warmed through, about 2 minutes. Season to taste with salt and pepper before serving.

Coming from California, home of one of the first ‘microbreweries’ (Anchor Steam Brewery) and one of the most renowned microbreweries in the country (Russian River Brewery), we were happy to find Seattle to be a place that really appreciates (and brews) good beer.

People here really love their beer and in our neighborhood alone, there are several bottle shops and breweries. You’ll find Matt regularly hitting up Chuck’s Hop Shop which is ‘conveniently’ always on the way home. When the weather is nice (and even when it isn’t), it seems that Seattleites love to gather around a few pints. Here, breweries welcome all your pets, children, and plenty of food trucks for gourmet mid-day nibbles.

Needless to say, we’ve spent a fair share of afternoons enjoying the local pours and have since taken to seeking out local beers whenever we travel. One of the things I love about beer is that it goes so well with so many foods and feels ever present as so many seminal experiences. In fact, I associate so many of my eating experiences with beer. Whether it’s a beach picnic, a street-side taco shop in Mexico, a piazza in Italy, a backyard barbecue, or a camping trip with friends, beer feels like it’s just there — not always the star, but always a companion.

When we were introduced to Pints and Plates, whose mission statement says, “we believe that life happens over food and beer,” we knew that they were after our own hearts. Musical Pairings are the foundation of what we do and generally believe that food is best paired with a complementary experience — be it music, coffee, wine, or beer. We chose to give their Green Beans with Dates and Pancetta, paired with Leinenkugel’s® IPL (an India Pale Lager) a whirl last weekend and are sneaking it in before the holidays because it would make a great (and simple!) holiday side dish.

The India Pale Lager is the perfect pairing for the sweet and salty dish (with a surprising light kick of curry!). It’s malty and hop-forward without being too overpowering more than anything, it’s supremely drinkable so everyone in your family (mom, dad, brother, sister, weird uncle) will be sure to enjoy it. The green beans can be blanched ahead of time and all of the add-ons (dates, pine nuts, pancetta) can be prepped the day before your gathering, too, so you can have this dish on the table is less than 20 minutes or less. 2 pounds green beans, ends removed

½ cup (about 8) dates, pitted and chopped
¼ cup balsamic vinegar
1 teaspoon curry powder
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ cup pine nuts, toasted

STEP 1
Bring a large pot of salted water to a boil. Boil green beans for 5 minutes until slightly tender and still vibrant green. Strain green beans and place in a bowl of ice water. Once cool, remove beans to a bowl.

In a large sauté pan over medium-high heat, sauté pancetta until fat has rendered and crisp, about 3 to 5 minutes. Remove pancetta and add green beans, dates, vinegar, curry powder, salt, and black pepper. Sauté, stirring frequently, over medium heat until the vinegar has reduced completely, about 2 minutes. Add pancetta and pine nuts, toss to combine, and serve.

Note: Green beans can be blanched a day before and stored in the refrigerator until needed. Serve with grilled or roasted chicken, pork dishes, and fish.

Roasted Green Beans with Pancetta, Red Onions and Garlic

Several weeks ago I heard from a local PR firm that wanted to share with me information on Stir Cooking School, a local venue in the Highlands area of Denver. I get a lot of press releases about local happenings but since my posts are primarily about what’s going on in my kitchen I seldom respond but for this one they offered a free event with a friend so I went, enjoyed a great time and best of all left with the recipe for these Roasted Green Beans with Pancetta, Red Onions and Garlic.

My offer was that I would love to come and visit their facility to do an interview and share the experience with my readers via a post. There is always one caveat…a recipe is required!

I asked for one recipe but they did even better and invited me to not only attend a class but suggested I bring a friend along as well. Well…sure!! I was given a calendar of classes to choose from but anyone who has read this blog for even one week should not be surprised at the one class that popped out at me and wrapped me up in it’s firm little fingers.

Bacon and Booze? Oh, yeah baby. That was the first of many delightful surprises.

I invited my friend Ansh, another local blogger, to accompany me. Ansh is from India and while she is my resident Indian food expert (I SO love this dish I ask her to bring to EVERY event I schedule with local bloggers), she is also accomplished in several disciplines and beyond that I knew we would have fun together.

What I did not know was that even though she always gives me such sweet praise for the cocktails I make for Friday Cocktail that she had never actually made one. Nope, she gives the recipe to her husband and has him do the honors. So I thought this was truly the perfect experience for her it’s cocktail making time! Yes she got into it!

The class was divided into two equal groups one would be working with Brennan in the bar area while the other group started in the kitchen. Then we switched a couple of times. Two rounds in the bar and two in the kitchen.

I can’t stress enough how pleasantly surprised I was. I didn’t expect anything bad but I also never expected to have such a great experience. The place is just beautiful but in a very cool sort of way and everything was the best. Pots, pans, cutlery, ovens…everything.

The owner Katy is a chef and more and it shows in her attention to every detail. I felt that way before I had even one taste of the AMAZING food!

Our first cocktail was an Aperol Sour easy, tasty, pretty too. Aperol is combined with gin, lemon juice, simple syrup and soda water and garnished with more lemon and it was a most refreshing cocktail. I love the Aperol Spritz cocktail so I was expecting this to please and it didn’t let me down. I think I might even like it better. Don’t tell my Italian friends please?

Our second round of the ‘Booze’ course was really special. A Bacon Infused Manhattan. Yep. Bulleit Bourbon is infused with bacon and used in the making of a Manhattan. Very subtle but so very good I’ll be including the details on a Friday Cocktail post soon.

For our two rounds of cooking Ansh and I were paired up at a table with two other students. Each pair made pork tenderloin wrapped in bacon, creamy polenta with smoked gouda and bacon and the green bean with pancetta and red onion dish I’m featuring today.

Your mouth is watering isn’t it? Even better? Each cooking station had just 4-6 people so everyone was actively involved in the cooking. Ingredients were proportioned and the staff of chefs was attentive to each group providing both instruction as well as answering questions.

Maybe the best part? They did all the dishes! OK, maybe not best but since I’ve been staying in a household that thinks the dishwasher is an evil contraption (why else would someone not use it. ), not having to do dishes was a dream.

Our event was a certified pork-a-thon. How can you not love pork tenderloin wrapped in bacon. Oh my. It was amazing. Delicious. The Bomb. We also made a Peach and Dried Cherry Balsamic Chutney to serve with it. Yes, I will post this recipe one day too.

Probably after I move though (4 weeks and 3 days but who’s counting?) this was meant for my NEW kitchen with a gas range (I’m so excited!).

The Creamy Polenta with Smoked Gouda, Bacon, Lemon and Rosemary? I could sit down with nothing else and be a very happy camper. It was really very easy yes, some patience is required but have a sip of that Bacon Infused Manhattan and relax! Ansh and I coordinated our posts today so you can hop over and meet her but with a bonus…she made this most amazing polenta EVER.

We might have tossed some coins deciding who did what because that polenta is so good and you might have thought I lost but you know what. I LOVE these green beans. Talk about an easy, easy dish but one with just perfect flavors.

Everything is mixed together on a sheet pan, roasted and then served. I made it again the other night and took it one step further. I covered the inside of my sheet pan with aluminum foil. Cleanup? What cleanup? I served them from the pan and then just tossed the foil and voila. Done.

A dish this tasty should be harder. Be glad it’s not and make it soon. I think it a great alternative for the upcoming Thanksgiving holiday if you’re not of a mind to make that green bean casserole thing that is outdated and all processed foods (you know what I’m talkin’ bout!). Besides…this is better. So much better.

Dinner is served. I used my phone to take photos onsite and this one simply does not do the finished plate justice. Everyone gets a plate and goes upstairs to sit with the entire class and enjoy a meal. It’s convivial and fun and Ansh and I must have said over and over how much we loved the experience.

This is a cooking school though and if I’m honest I’ve probably got enough years experience that the teaching part of the sessions were skills I was familiar with but it’s wasn’t my experience that mattered in that realm it was that of everyone in the class with us.

Couples that cooked but thought a meal like this far beyond their capabilities and left knowing it was not. A group of older women who needed a kickstart to get back in the kitchen. One fellow who loved to cook was there with his girlfriend who make it his birthday gift. Know someone who shows a desire but needs some hands on help? What a great Christmas gift a class at Stir would be!

If you’re in Denver you can even get a cocktail from the small bar area and watch classes in session. The two areas are separated by a wall of glass sliding doors…very cool. It kept our groups separate but not if you know what I mean. The decor was warm and fun and well, we had a total blast. Ansh and I want to go back wouldn’t it be fun with a gaggle of girlfriends? Now, before we get started, if you think you don’t like green beans, please find some fresh ones. Trust me, they have nothing to do with canned green beans (to be honest, I’m not a huge fan of those either). As with any beans, they take a little prep work (washing, snapping off the ends, and blanching), but they are *so* worth it.

We didn’t grow our own fagiolini this year, but we will definitely give it a go next year. The beans used in this recipe, of course, are locally grown though. And if you’re curious as to what *is* going on in our garden, check out our:

OK, the recipe. Traditionally instead of the pancetta, the Badolatese would use “carne salata,” spicy, salty lard particular to here (luckily) we didn’t have any, so we substituted pancetta, and it worked great. You can use cubed ham if you’re short on pancetta.

Green Beans, Pancetta, and Potatoes
Fagiolini con pancetta e patate

  • 5 tablespoons olive oil
  • Half kilo (about a pound) of fresh green beans
  • One medium onion, diced
  • 100 grams (about 1/4 pound) of pancetta, cubed
  • 4 medium potatoes, peeled and cut into chunks or cubed (your choice)
  • Salt to taste

1. Wash beans and snap (or snip) off ends.

2. Bring a pot of water to boil, then drop in beans for about 3-5 minutes until they are bright green but still rather al dente. Many say to then drop them into a waiting bowl of ice water to stop the cooking process, but I never do–they’re always fine, and I save myself another dish to wash. You just have to get used to when to take them out, that’s all.

3. Put about five tablespoons of oil in a large frying pan and heat over medium. When the oil is hot, add the onions and let saute for a couple of minutes.

4. Add pancetta to pan, again letting it saute for a couple minutes, then add potatoes and mix together.

5. The potatoes will take the longest to cook, of course, so let this mixture cook for about 15-25 minutes–depends on how large your potato chunks are.

6. Add the green beans and some salt and mix everything together. Let cook for another 10 minutes or so, stirring and adding water if it gets a bit dry. The dish is ready when the potatoes and beans are cooked to your satisfaction. Be sure to adjust for salt.

7. Serve hot with bread–or eat leftover cold the next day as a salad. YUM!


Pancetta is a salty and delicious addition to my Green Beans with Pancetta. But what is it anyway, and how is it different than bacon?? Both bacon and pancetta are cured pork belly. The difference is that pancetta is just simply cured and either thinly sliced or cut into cubes, while bacon is cured and then smoked. If you can’t find pancetta, you can easily substitute bacon into this recipe.

This is a great holiday side-dish, or for any day of the year. Serve it at Christmas, Thanksgiving, or on a regular Tuesday night. Your kids will love the depth of flavor the pancetta adds to the green beans, so make sure they give it a try. I like to pair my green beans with a protein and a starch for dinner.
