Ingredients for the filling:
300 grams of grated and squeezed apple juice
300 grams of grated pumpkin
2 measures of 100 grams of sugar, for both fillings

Now we begin to form the strudel. Take one piece of dough at a time and spread it with the rolling pin, with the layers up. We work with a lot of flour because otherwise the butter will stick to the worktop and the twister and the sheet will break. Apple and Pumpkin Strudel

Today we will do Apple and Pumpkin Strudel. Last year I showed you my pumpkin pie recipe and I told you that there is no autumn in which I do not make pumpkin recipes. This year I said that I must show you how I make the strudel. We make a fragile dough, which we cover in butter, then we roll it as if we were making snails and we fill it with apple and pumpkin.

Dough ingredients:
220 grams of flour
150 grams of flour + 150 grams of melted butter

100 ml of lukewarm milk
1 teaspoon salt

We start by making the dough. In a bowl put the flour, salt, egg and milk. Homogenize everything well and when we have the dough formed we put it on the floured worktop and knead it a little more. We form it into a ball and spread it with the twister as thin as we can.

Put the melted butter over the 150 grams of flour and mix well. Grease the dough sheet with the composition of butter and flour. Roll the dough as if we were making snails and cut it into 7 equal pieces.

Ingredients for the filling:
300 grams of grated and squeezed apple juice
300 grams of grated pumpkin
2 measures of 100 grams of sugar, for both fillings
1 tablespoon cinnamon

Now we begin to form the strudel. Take one piece of dough at a time and spread it with the rolling pin, with the layers up. We work with a lot of flour because otherwise the butter will stick to the worktop and the twister and the sheet will break. Spread as thin as we can, then add apple or pumpkin, sprinkle with sugar and cinnamon. Roll the dough, sealing the filling well inside. We continue to do the same until we finish filling all the pieces of dough.

Put each strudel in a tray covered with baking paper and cut from place to place with a knife.

Bake the cake at 200 degrees Celsius for about 40 minutes or until golden brown on top.

Look how good it looks! As soon as we take the cake out of the oven, we powder it with powdered sugar. The dough is very fragile from the butter layer, it practically melts in the mouth, and the filling is plentiful.
