Baked cheese macaroni pudding & # 8211 nostalgic recipe from my childhood. I am very sure that most of those who follow my recipes remember this recipe with great pleasure. I think there is no child who has not tasted this goodness and if there are exceptions, then it is time to take action.
Baked macaroni pudding is the best pudding! And the easiest to prepare, with few ingredients, at anyone's fingertips.
Certain recipes manage to bring us back to childhood, as the machine of time would do. I would like to be at least one day a child pampered by my grandmother, with cakes and foods that did not take into account diets, when no one thought that what you chose to eat at dinner or between meals could accumulate too many calories. At that time I did not see so many people stressed. Nobody cared if he ate an apple straight from the tree without washing it under running water. Chip candies, caramels that stuck to the masses, turbo gum, eugenics, puffins were present in the lives of children at that time. No one wondered how many chemicals and dyes were in all this. At that time we were playing in front of the block and we were a big gang.
If I were to get in the time machine, I would go back to those times. I know for sure that my mother would take out of the oven a macaroni pudding prepared with cheese and eggs received from the country.
I fondly remember the macaroni pudding with hot cheese, fresh out of the oven, my friends who suddenly appeared at the door, as if the smell of the pudding had sounded the alarm in the neighborhood. I shared it with them, just as they shared each cake prepared by their mothers.
There were not many types of pasta in my childhood. Macaroni, a little thicker than the ones I buy nowadays, soup noodles and that's about it. I heard about penne, spaghetti, fusilli, farfalle, tagliatelle late, but I used them all later for this pudding. In Transylvania, the cheese pudding placed between the pie sheets turns into a spectacular dessert, like its name: Vargabeles. I saw them prepared by Alexandra Juncu.
In the rest of the country we find them simple, like baked cheese macaroni or pasta pudding.
Even if many of you know how to make this pudding, I leave my recipe, as I took it from my mother.
Grandma also made this pudding, but she put nuts instead of raisins, and the macaroni was cut by her. It was a holiday when he put a large pot of noodles with cheese and baked eggs on the table.

Banat abounds with more and more diverse and delicious recipes. Whether we are talking about the main cuisine, with more and more complex dishes in terms of taste and technique, or the dessert one, full of authentic traditional dishes, in Banat you can eat everything, for all tastes and pretensions.
A more pretentious dessert as a technique, of Banat-Hungarian origin, but extremely delicious is also vargabeles, a recipe for noodles with baked cow's cheese that will satisfy the craving for sweets for even the most pampered of the house. It is quite easy to prepare, even if housewives must be very careful when cooking.
Ingredients for vargabeles
- wide noodles & # 8211 400 grams or two packs
- four eggs
- four tablespoons of flour
- 200 grams of sugar
- 500 grams of cottage cheese
- an envelope of vanilla sugar / a teaspoon of essence
- 100 grams of raisins
- a pinch of salt
How to prepare vargabeles
We start by boiling the crude oil according to the data on the package. Then mix the eggs with the sugar and mix them until you get a homogeneous composition. Add the vanilla, flour and cheese, and at the end, mix the raisins in the dough with a wooden spoon.
The composition thus obtained is transferred to a larger bowl, to which is added the well drained noodles. Before that, we leave a quarter of the composition aside for later. In a pan, which we greased with oil, we put the crumbs mixed with cheese.
Over it we pour the composition set aside, as a protective layer. We can also sprinkle vanilla sugar or cinnamon on top. Put the tray in the oven and let it simmer until the vargabeles are browned on top.
I thought that this noodle pudding fits in the Easter menu because the next day is even better, so you can prepare it the day before.
Normally puff pastry is used for the crust, only I, lucky as I am, received an invitation some time ago to a pastry shop a few km from Targu-Mures. A pastry that produces a single assortment of cakes: Dutch waffles (stroopwafels). You will realize that I could not refuse and on the first road in the area I turned to Diana and Frank, its owners. Frank is Dutch, born in the hometown of waffles and cheese of the same name, Gouda. Who else has the opportunity to taste waffles prepared according to the original recipe and in addition prepared only from natural ingredients? Easter recipe without dough with cheese and raisins
Ingredients (for a round tray with a diameter of 20 centimeters):
- 600 grams of well-drained sweet cheese very well drained
- 4 eggs
- 4 tablespoons sugar
- 1 teaspoon of cinnamon
- grated peel of half a lemon
- peeled from half an orange
- 1 pinch of salt
- 100 grams of raisins soaked in a little milk with rum essence
- butter and breadcrumbs (to grease and wallpaper the baking tray)
Method of preparation:
First of all, preheat the oven to 180 degrees Celsius. Then we take care of Easter: mix the cheese well with the sugar, add the eggs, lemon and orange peel, raisins and cinnamon and mix until the composition is homogenous with a wooden spoon.
Then grease the round tray with a little butter and line it with breadcrumbs on the bottom (but you can skip this step if the tray is non-stick), then add the cheese mixture.
Leave in the oven at 180 degrees for 40 minutes until golden.
Allow to cool, then place on a plate and garnish with powdered sugar.
Advice: Before you get to work, be sure to drain the cottage cheese well so that it is compact.
Easter with cheese and raisins
Knead the dough from the following ingredients: sugar, eggs, milk, essences, yeast dissolved in milk and a little sugar. Then add the flour and knead well. After that, gradually pour the oil, until it comes off the hand.
The obtained crust is left to rise for 10 minutes in the vessel in which it was kneaded.
Coca is divided into 3 equal pieces. Each piece (Easter) is added in round shapes made of foil.
On the bottom of each form is placed a layer of coca of approx. 200 g and one centimeter thick. The edge of the shape is wallpapered with a braid of two strips of coca. Place the filling in the middle. Put a kind of grill made of coca strips over the filling. Leave to rise again until the composition slightly exceeds the shape. Place in the oven and leave on the right heat (165-170 degrees Celsius).
Bake for about 45 minutes in the oven. Remove from the oven and grease with honey or syrup (water + sugar). Allow to cool for 30 minutes.

Noodle pudding with sweet cheese or "Vargabeles" as it is known in Transylvania, is a classic recipe, inherited from grandparents. It is one of the recipes that found its place in our cookbook from the beginning. It is a dessert that can be eaten hot, along with a globe of vanilla or cold ice cream. powdered with sugar. Anyway, it will definitely please everyone!
- 400 g of noodles leave with 8 eggs
- 800 g of fat cow's cheese Fir
- 200 g raisins
- 1 ampoule of rum essence
- 400 ml of water
- 5 large eggs
- 150 g caster sugar
- 150 g powdered sugar
- 2 tablespoons lemon peel
- 1 piece vanilla pods
- 1 pinch of salt powder
First we put the raisins to rehydrate in 400ml of hot water and rum. We separate the eggs. Rub the yolks with 150g powdered sugar and vanilla, 10 minutes with the mixer at high speed, until it doubles in volume and we have a cream the consistency of an ointment. Add the cottage cheese, raisins, lemon peel and mix.
Boil the 400g wide noodles in 4 liters of boiling water for 6 minutes, following the instructions on the package. Drain the noodles well and add them over the cheese mixture. We homogenize. and add the beaten egg whites with 150g caster sugar and a pinch of salt. The egg white foam is added gradually and incorporated with a spatula or wooden spoon, slowly, with folding movements.
Pour the composition into a baking tin greased with butter or non-stick spray. . Level with a spatula. Bake the noodle pudding with sweet cheese for 30-35 minutes at 180 ° C or until it is nicely browned and makes a crispy crust.
