  • 9 slices bacon, fried and chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 250g plain flour
  • 170g Cheddar cheese, grated
  • 1 teaspoon caster sugar
  • 15g baking powder
  • 1 pinch salt
  • 1 teaspoon pepper
  • 1 large egg
  • 235ml milk
  • 60ml oil

  1. Preheat the oven to 200 C / Gas 6.
  2. fry the bacon until crispy and chop it.
  3. In a large bowl, combine the bacon with the next 8 ingredients. In a another bowl, beat the egg, milk and oil.
  4. Stir into dry ingredients just until moistened. Fill greased muffin cups two-thirds full.
  5. Bake for 15 to 20 minutes or until a skewer comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers.
  6. They can be eaten warm or cold.

I've just eaten two warm out of the oven and they're really yummy!Neither one of us likes garlic and my picky husband doesn't fancy cold onion (he'll be taking them for his lunch), so I've had to leave out those two ingredients. I added a half teaspoon of dry mustard and next time will chop some chives into the dry mix.These are lovely and moist and flavourful - Thanks for sharing nina007!-20 Feb 2013

In need of a weekend brunch treat? These satisfying bacon, egg and chive muffins are like an Full English breakfast in one. Enjoy them warm from the oven, spread with butter, ketchup or brown sauce.

Courgette muffins

A super-simple savoury muffin recipe, made with grated courgette and cheddar. These easy vegetable muffins make a delicious afternoon snack for kids and adults alike.

Mexican corn muffins

Whip up a simple, healthy breakfast with these cheesy corn and polenta muffins. They’re packed with spicy jalapeños, spring onions and mature cheddar. Make them in less than an hour and serve with a cooling lime yogurt.

Recipe Summary

  • 1 ½ cups all-purpose flour
  • ½ cup oat bran
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • 1 cup white sugar
  • ½ cup creamy goat cheese
  • 2 eggs
  • 1 cup grated cooked beets

Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper liners.

Whisk flour, oat bran, baking powder, baking soda, cinnamon, and ginger in bowl. Whisk sugar, goat cheese, and eggs together in a separate bowl until smooth and creamy stir flour mixture into goat cheese mixture until flour mixture is completely absorbed into batter. Fold in beets. Spoon batter into the prepared muffins cups, filling 2/3 full.

Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

Ingredients

uncooked breakfast sausage, casings removed

baby spinach (about 3 ounces)

freshly ground black pepper

shredded sharp cheddar cheese (about 4 ounces)

finely chopped fresh chives

Instructions

Heat the oil in a medium frying pan over medium-high heat until shimmering. Add the sausage and cook, breaking up the meat into small pieces with a wooden spoon, until browned and cooked through, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes. Remove from the heat and set aside to cool to room temperature, about 15 minutes.

Meanwhile, arrange a rack in the middle of the oven and heat to 375°F. Coat the wells of a standard 12-well muffin pan generously with cooking spray set aside. Whisk the flour, baking powder, baking soda, salt, and pepper in a large bowl and set aside. Melt the butter and place in a medium bowl to cool to room temperature.

Add the buttermilk and eggs to the butter and whisk until combined. Pour the buttermilk mixture into the flour mixture and mix with a wooden spoon or rubber spatula until just combined some lumps are fine. Add the sausage mixture, sprinkle with the cheese and apple, and fold until just combined. Divide the batter among the muffin wells they will be very full. Sprinkle with the chives.

Bake until the tops just begin to brown and a toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes. Place the pan on a wire rack and cool for 5 minutes. Run a thin knife around each muffin to loosen, then transfer to the rack. Serve warm or at room temperature.

Recipe Notes

Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 4 days, or in the freezer for 3 months. Reheat cold or thawed muffins in a 300°F oven for about 10 minutes before serving if desired.

Seriously Moreish Savoury Muffins

Makes: 12 medium sized muffins/30 mini muffins

Prep time: 10 minutes
Cook time: 15 minutes

Ingredients:

  • 1.5 cups flour (or gluten free flour)
  • 1 Tbsp baking powder
  • a few healthy grinds of rock salt (1/4 tsp-ish)
  • a few healthy grinds of fresh cracked pepper
  • 1 cup tasty grated cheese (or a combo of leftover cheeses)
  • 1 Tbsp chopped parsley (optional)
  • 1 egg
  • 1 cup milk
  • 75g butter, melted
  • 2 Tbsp your favourite homemade chutney
  1. Preheat oven to 180ºC fan bake.
  2. Sift the flour, baking powder – add salt, pepper, cheese and parsley (if you have any handy).
  3. In a separate bowl, beat egg and milk together with cooled melted butter make a well, slop into the dry mix, add chutney, then fold gently. Don’t over-mix otherwise it will be tough.
  4. Divide mixture into well greased mini muffins tins (spray oil is brilliant) and bake oven for 15 mins.

Thank you Annabelle, this is a wonderful recipe that even my teenage boys are requesting weekly. Ahhh, everyone has to have a ‘go to’ recipe to whip up which everyone loves. Sorted.
