Tosca cake dessert

It is a special cake from a pandispan with poppy seeds and fine vanilla cream with well-syrupy biscuits and a chocolate icing.

  • 6 egg whites
  • 150 gr sugar
  • 50 gr mac
  • 2 tablespoons coconut
  • 3 tablespoons flour
  • 1/2 teaspoon baking powder
  • CREAM:
  • 6 yolks
  • 8 tablespoons sugar
  • 3 tablespoons starch
  • 2250 ml milk
  • 200 gr butter
  • 1 vanilla essence
  • ROCK 2:
  • 150 gr PETIT BEURE biscuits
  • SYRUP:
  • 100 ml water
  • 100 gr sugar
  • 1 tablespoon coffee liqueur
  • GLAZE:
  • 100 gr dark chocolate
  • 100 ml liquid cream
  • 50 gr butter

RECIPE PREPARATION Dessert Tosca cake:

The egg whites are mixed with foam, the sugar is added until it becomes shiny like a meringue. Add poppy seeds and coconut and mix gently. Mix the flour with the baking powder and sift it over the composition. Mix lightly with a silicone spatula until all the flour is incorporated. Take a tray, put baking paper that is greased with oil and pour the composition in the oven heated to 180 degrees and bake for 15-20 minutes until browned on top. For cream mix the yolks with 6 tablespoons of sugar until it doubles in volume, add the starch, milk and simmer until it thickens. Allow to cool. Meanwhile, beat the butter with the remaining 2 tablespoons of sugar and vanilla essence and then mix with the boiled cream. For syrup caramelize the sugar which is quenched with water and let it boil until all the burnt sugar is scalded. Add the liqueur. The biscuits are syruped in this syrup. For glaze put the broken chocolate in the pieces in a pan together with the whipped cream and the butter on the fire to bring to a boil until the chocolate melts. Set aside Assembly: put the yolk cream over the baking top, put the syrupy biscuits over the cream and put the icing on top. Top with chocolate flakes or grated chocolate.
