Wash the fillet and dry it with a towel. Sprinkle it with half a lemon juice. Sprinkle the mixture of herbs on the entire surface and season with salt and sprinkle with red peppercorns that will give it a special flavor.
Let all the flavors penetrate for 10 minutes, put two tablespoons of olive oil on top, wrap it in aluminum foil and put it on the hot grill, greased with a tablespoon of oil.
After leaving it for about 3-4 minutes on each side, remove it from the foil, sprinkle with the juice from the remaining half of the lemon and put it on the grill for 1-2 minutes on each side.
Do not leave it longer because it will dry out and become dry.
Take out on a plate and serve according to your preferences with lemon, garlic sauce, yogurt sauce, remoulade sauce, etc. If you want you can serve it with a garnish.
