(4 ounce) tilapia fillets

1/2

cup Fiber One™ Cereal

1/2

teaspoon Cajun seasoning

1/2

teaspoon onion powder

1/2

teaspoon garlic powder

teaspoon Italian seasonings

    Preheat oven to BROIL and line a cookie sheet with aluminum foil. Spray aluminum foil with cooking spray.

    Place Fiber One™ in a food processor or blender and process until fine crumbs. Add Parmesan cheese, Cajun seasoning, onion powder, garlic powder, and Italian seasonings and pulse once more.

    Coat tilapia in egg white and then coat in crumbs. Place on prepared cookie sheet and spray top of tilapia with cooking spray.

  • 4

    Broil for 3-4 minutes then turn fillets over and broil for another 3-4 minutes or until done.

  • 5

    Squeeze one lemon slice over each fillet and enjoy.

    This Fiber One Tilapia is a moist flaky fish with a crispy seasoned breading made from … you guessed it, Fiber One cereal. The seasonings add a ton of flavor and the Fiber One adds a crunchy breading along with the fiber we all need.

    Just throw some Fiber One cereal and seasonings into a food processor or blender and process the cereal until fine. My family had no idea that it wasn’t just regular breadcrumbs. Coat the tilapia in the crumbs then broil for a couple of minutes on each side.

    Squeeze some lemon on the cooked fillets and you have a healthy meal in under 20 minutes.

For most, it's a cereal that deserves no more than a judgmental scoff and a clever poop joke, but for me, it's a way of life. From muffins to breaded poultry to delicious desserts, there's no limit to what you can make with this glorious, fibrous cereal.

I was in 4th grade the first time I had Fiber One cereal. A combination of persistent ankle problems and my slightly round (but still completely adorable) figure led my pediatrician to suggest that I saw a nutritionist to help me shed some pounds during my formative years. What came as confidence-shattering, grossly humiliating news at the time, is now one of the greatest gifts a medical professional has ever given to me (besides those care packages you get at the end of a teeth cleaning), because it led me into the warm, everloving embrace of a hearty bowl of Fiber One.

The meal plan that my nutritionist carved out for me was as a simple one, and it started with a bowl of this cereal (the original variety), which packs an impressive 14 grams of fiber in just one half-cup serving, first thing in the morning. My parents were not the type to let me have a breakfast cereal loaded with cookies and marshmallows and chocolate chunks, so getting in the routine of eating Fiber One for breakfast was not all that traumatizing. What entered my life as an unwanted suggestion from a nutritionist, who I was ashamed to admit I was seeing, slowly became a food I truly loved. If you have a favorite fish that you prefer, it will work well for it, too! Salmon, tuna, even ground mullet, or fresh water catfish would taste just as good as the tilapia in this Clean Eating Tilapia Recipe.

The only thing that might not work well is a soft fish like white trout. However, if you try it, I would love to hear how it goes. Personally, I find that the softer fish, like white trout, tends to fall about. So, you may not get an intact fillet if you go with that fish. We both know that it doesn&rsquot have to be pretty to be yummy, though.

Recipe Summary

  • 4 tilapia fillets
  • 1 ½ cups orange juice
  • 6 tablespoons butter, softened
  • ¾ cup panko bread crumbs
  • 3 tablespoons orange juice
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh basil
  • ½ cup orange juice

Pour 1 1/2 cups orange juice into a resealable plastic bag. Add tilapia fillets, coat with the juice, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator 3 hours to overnight.

Preheat oven to 400 degrees F (200 degrees C).

Whisk butter, panko bread crumbs, 3 tablespoons orange juice, garlic, and basil together in a bowl.

Remove tilapia from the orange juice and shake to remove excess liquid arrange fillets in a 13x9-inch baking dish. Discard marinade.

Pour 1/2 cup orange juice over the tilapia fillets. Spread butter mixture over the top of the filets to cover each completely.

Bake in preheated oven until the liquid is bubbling and the fish flakes easily with a fork, about 15 minutes.


Basic Whole-Grain Fiber Bar

These simple whole-grain fiber bars are made with rolled oats and whole-wheat fiber, sweetened with honey. If you want to get creative, try one of the four flavor variations below or make up your own, swapping in your preference for nuts, nut butter, and sweetener.

Ingredients:

  • 1 cup pitted Medjool dates
  • 1 ½ cup rolled oats
  • 1 cup raw almonds, coarsely chopped
  • ¼ cup whole-wheat flour
  • 5 tablespoons honey
  • 5 tablespoons natural almond butter

Instructions:

  1. Place the dates in a food processor and process until it forms a sticky dough, about 1 minute.
  2. Spread the oats and almonds in a rimmed baking sheet.
  3. Toast the oats and almonds at 350°F for 10 minutes until lightly browned.
  4. Transfer the toasted oats and almonds to a mixing bowl then add the whole wheat flour and the processed dates.
  5. Next, combine the honey and almond butter in a small saucepan.
  6. Cook the mixture on low heat and stir until the ingredients melt together.
  7. Stir in the oat and date mixture until well combined then spread it in a parchment-lined dish.
  8. Press the mixture into the pan as evenly as possible and then cover and chill for 20 minutes.
  9. Finally, cut the mixture into bars and store in an airtight container.

Variation 1: Maple Walnut Fiber Bars

First, swap out the almonds in the recipe for chopped walnuts and then replace the honey with pure maple syrup. Finish by preparing the recipe according to the instructions above, making the aforementioned changes.

Variation 2: Honey-Roasted Peanut Fiber Bars

First, replace the almonds in the recipe with honey-roasted peanuts (or plain peanuts). Next, swap out the almond butter for peanut butter. Prepare the recipe according to the instructions above, making the aforementioned changes.

Variation 3: Cranberry Mixed Nut Fiber Bars

First, replace half of the pitted Medjool dates with dried cranberries, ideally unsweetened and then replace ¾ cups of the almonds with ¼ cup each of cashews, walnuts, and peanuts. Finally, prepare the recipe according to the instructions above, making the aforementioned changes.

Variation 4: Cinnamon Raisin Fiber Bars

First, replace half the Medjool dates with seedless raisins and then add ½ teaspoon of ground cinnamon to the honey and almond butter mixture. Prepare the recipe according to the instructions above, making the aforementioned changes.
