Turn on the oven at 180 degrees.
The cherries, peeled and thawed, are left to drain in a sieve. Beat the egg whites well with the sugar, gradually add the yolks, vanilla sugar and salt. Then, with a spatula, gradually incorporate half of the flour and butter, then the other part of the flour and the remaining butter, taking care to keep a tablespoon of cherry flour.
In a tray lined with baking paper, spread the dough, powder the cherries with flour and place them over the dough. Bake for 30 minutes until the cake turns golden. We turn off the oven and leave it to cool.
When it has cooled, powder it with powdered sugar.
