Method of preparation

In a bowl put the sugar, butter, milk, cocoa, eggs, ammonia quenched with vinegar and a little flour. Mix all the ingredients and add the flour until the crust no longer sticks to your hands.

Divide the dough in half and spread a sheet on the back of a tray (greased with oil) with a rolling pin. Put the tray in the oven until the sheet is baked, then do the same with the second part of the dough.

Separate the egg whites from the yolks.

Beat the egg whites with a pinch of salt, then mix with the sugar until they become like a meringue. Add the yolks, oil and vanilla essence and mix. Add the flour (gradually) and the baking powder and mix the dough lightly, using a silicone spatula, from top to bottom.

Turn on the oven to heat.

Grease a pan with oil and place baking paper in it. Spread the dough and place the tray in the oven until the top is nicely browned.

Put a pot of water on the fire.

In another bowl put eggs, sugar, vanilla essence, flour and milk (gradually) and mix. Add the chopped butter. Place the bowl on a steam bath and mix in the cream composition until it thickens.

Put a sheet on the tray, add half of the cream, the pandispan top, the rest of the cream and, at the end, the second sheet. Put a newspaper over the cake and another tray (or fur) together with something heavy in the middle and leave the cake until the next day to soften.

The next day, melt the chocolate with the milk and place it over the cake. After the chocolate thickens, the cake can be cut and powdered with sugar in various shapes.

Sheet Preparation

Whisk the egg whites with a pinch of salt.

Mix flour (65 gr) with cocoa.

Gradually add the sugar and continue mixing until completely dissolved.

Over the yolks add a tablespoon of beaten egg whites and mix for 1 minute.

Lightly mix the egg whites with the yolks and add the cocoa flour composition.

Stir gently until incorporated.

The formed composition is placed on 2 baking sheets (cut according to the tray & # 8211 30 & # 21520 cm) and spread evenly with a spatula, leaving about 2 cm to the edge.

Bake the sheets on the back of the tray, in the preheated oven at 180 C / 10 minutes.

After baking, dust with flour (15 gr) and detach immediately from the paper.

Cream preparation

Boil the milk (600 ml) over low heat.

Separately in a bowl, mix the eggs well with the sugar, starch and the rest of the cold milk.

When the milk has started to boil, add the composition formed above, turn the heat to low and stir continuously until it thickens (max 1 minute).
Take the book off the heat, add the vanilla extract, salt powder and mix.

Allow to cool completely then mix with diced butter.

Mix until you get a homogeneous composition.

Countertop preparation

Whisk the egg whites with a pinch of salt.

Gradually add the sugar and mix continuously until it dissolves completely.

Mix the yolks for 1 minute with the vanilla sugar.

Over the yolks add the beaten egg whites, mix lightly.

Gradually add the flour and mix gently, from bottom to top, until completely incorporated.

Add the composition formed in a tray lined with baking paper and spread in an even layer.

We hit the table tray, 3-4 times, to remove the air from the composition.

Bake in the preheated oven at 180C for about 20 minutes, until golden.

TV Cake Assembly

Place the first sheet on a tray lined with baking paper.

Add half the amount of cream and spread it in an even layer.

Place the worktop and press lightly.

Add the rest of the cream and spread it in an even layer.

Place the second sheet and press lightly.

Cover the cake with cling film and place a countertop weighing about 3-4 kg & # 8211 for 1 hour.

Remove the top with the weight and let the cake cool for at least 2 hours.

Gazura preparation

Boil the water with the sugar.

After the first boils, add the diced butter, cocoa and mix.

Let it boil for a maximum of 3 minutes, remove from the heat and add the vanilla sugar.

Stir until the sugar dissolves.

TV Cake Finishing

Slightly warm icing spreads evenly over the entire surface of the cake.

Put it in the cold until it hardens.

For portioning we use a well-sharpened knife, with the blade passed through hot water and wiped well.

Remove the edges then slice the cake into suitable pieces.


Method of preparation

Rocks pandispan: It separates ouale. Beat the egg whites with a pinch of salt, vanilla sugar and added sugar. Add water and beat hard again. Put the yolks one by one, mixing lightly with a spatula. Flour mixed with baking powder is put in two portions, mixing gently until incorporated. Pour the composition into a tray lined with baking paper and place in the preheated oven at 180 degrees for about 30-35 minutes (toothpick test). When ready, remove from the oven and allow to cool.

Brown wheat: Separate eggs. Beat the egg whites with a pinch of salt and sugar. The butter is mixed at room temperature, the foam is added one by one, then the cocoa. Pour alternately flour and milk, then add the foam and baking soda quenched with lemon juice. Divide the quantity into two equal parts and bake two sheets in a row in the same tray in which the pandispan top was baked.

Cream: In a saucepan mix the flour with the sugar, vanilla sugar and milk. Put it on the fire and leave it until it thickens. Remove from the heat, allow to cool slightly and then add the butter. Mix well.

Syrup: In a kettle mix water with sugar and vanilla essence.

Assembling the cake: Take a brown sheet and place it on a tray. Grease with half the cream. Grease the pandispan top on one side with apricot jam. Place the greased part over the brown cream top. Then syrup the pandispan top, then grease it again with jam. Add the rest of the cream, then place the second brown sheet.


We first prepare the sponge top. Mix the eggs with the sugar until the composition becomes creamy. Add flour and incorporate. Pour the dough into a tray lined with baking paper. (tray dimensions: 32/35)

Bake in the preheated oven, at 180 degrees, until lightly browned on top. Set the worktop aside to cool.

We are preparing the cocoa top. Mix the liquid ingredients. Add the quenched ammonia with a teaspoon of vinegar. Add the dry ingredients and knead until you get a malleable dough that we will divide in two.

Bake the sheets on the back of the tray. I sprinkled flour on the tray beforehand. Let them cool.

We prepare the cream. Put the milk, sugar and flour in a bowl. Stir to mix and simmer, stirring constantly, until the composition thickens and becomes a pudding. Cover it with cling film so that it does not catch the crust and let it cool. Rub the butter then add the cold cream, little by little, and incorporate.

Divide the cream into two equal parts.

We start assembling the cake. First place a sheet of cocoa and spread half of the cream over it. Place the sponge cake on top and then the remaining cream.

Prepare the icing: Put all the ingredients for the icing in a bowl and boil them until they boil. Leave the icing aside to cool then glaze the cake. Refrigerate until hardened.


How to prepare the cake TV

Mix the two eggs with a pinch of salt, then with the sugar until they become frothy.

Sift the flour together with the baking powder and cocoa.

Over the mixed eggs, add, in turn, the oil, milk, baking soda soaked in lemon juice and essence.
Homogenize the composition after each ingredient added.

Then, incorporate the mixture of flour, cocoa and baking powder, gradually adding it.

The resulting dough will be non-sticky and slightly firm.

Cover it with cling film and let it rest for 10-15 minutes, in a cool place.
Then we divide it into two equal parts.

We spread each part of the dough on the floured table, in a sheet the size of a tray.
Bake, in turn, the two sheets, on the back of the tray, for 3-4 minutes, in the preheated oven, at 180 degrees.

Grease the pan with oil and sprinkle a little flour on it before placing the sheet.

How is sponge cake prepared?

Separate the egg whites from the yolks.

Sprinkle a little salt over the yolks and rub them to intensify their color.
Ideally, we should use eggs from chickens, if we have them. The color of the sponge cake will be an intense yellow.

Sprinkle a little salt over the egg whites and mix them with foam.

Gradually add the sugar and a little lemon juice and continue mixing until you get a firm meringue.

Lemon juice helps the meringue become firmer.

Remove the mixer and insert a silicone or wooden spatula.

Add the yolks and lightly incorporate them into the meringue, with firm movements, from the bottom up.

We do this so as not to leave the meringue and to remain aerated.

Then add the oil, the essence and, gradually, the flour.

Homogenize the composition and spread it evenly in the tray lined with baking paper, at the base.

Grease the side walls of the pan with oil and sprinkle powdered sugar on them.

Powdered sugar helps to peel off the top after baking, being more effective than flour.

Bake the sponge cake for 35 minutes, at 180 degrees, but make sure it is baked, doing the toothpick test.

We do the test in the last 5 minutes.

Remove the tray at the edge of the oven, quickly insert the toothpick in the middle of the sponge cake and lift it.
It must come out clean if the sponge cake is baked.

If it comes out wet, leave the sponge cake in the oven for another 7-8 minutes.

How to prepare the cream?

Mix in a bowl, the flour with the starch and dilute them with a little cold milk. We boil the rest of the milk with a pinch of salt and sugar. When the milk reaches boiling point, add the flour mixture with the starch, in a thin thread, stirring intensely in the bowl.

Stir continuously in the cream, with a spatula, or a pear-shaped wire, until the cream thickens like a pudding. Lift the bowl off the heat, add the essence and cover the cream with a foil, directly over it, so as not to catch the crust.

Remove the butter from the fridge and keep it at room temperature for 10-15 minutes before adding it to the cream. Mix the butter with the vanilla sugar and add little by little the cold cream, mixing the composition each time.

How is it assembled?

We place in the cleaned tray, the first brown sheet. Grease it with half the apricot jam and spread half of the cream over it. Place the sponge cake over the cream.

Grease it with the rest of the jam, spread the rest of the cream and place over it, the other brown sheet. We cover the cake with baking paper or foil and place a weight on it: a book, a shredder, which we have at hand.

We give the cake to cool, from one day to the next, preferably, in order to hydrate the sheets well and to be able to portion them nicely. If we die of appetite, in a few hours we can indulge in the corners of the cake, which are the best.

How to prepare the glaze?

Melt the chocolate, broken into small pieces, in the whipping cream, heated to near boiling point.

Stir vigorously until melted and smoothed and spread the hot icing over the already frozen cake.
Let the icing cool and harden, then we can slice the TV cake and serve with great gusto.
