The dough of these biscuits is made of a crumbly flavored shortcrust pastry, with a cascade of sugared almonds in the center that will come out at the first bite. How to make surprise cookies
Prepare the pastry by putting the flour in a large bowl.
Arrange the sugar, spices, softened butter, orange peel, egg in the center and mix.
Once you have a compact dough, wrap it in plastic wrap and put it in the fridge for 1 hour.
Once the dough has been taken, roll it out on a floured work surface.
With a cookie cutter form the shapes, considering that for each cookie you will need 3 discs (2 full and 1 with a hole in the center).
Transfer to the baking tray lined with parchment paper and cook at 175 ° C for 15 minutes static.
Let them cool.
Now melt the white chocolate and put it in a pastry bag.
Then use it to attach and compose the cookies, starting to place it on the edges of the first full cookie.
Attach the second biscuit, the perforated one, on top, with light pressure.
