I made the zucchini omelette roll for a cold meal dinner, and it unexpectedly sold out. The cooking of the omelette in the oven I must say that it amazes me every time, in this way the eggs are frothy and do not absorb that smell, sometimes annoying, of fried food, I will tell you, I prefer it this way;) Compared to the dish I have I propose lately, this omelette roll is quite light, you can serve it just warm or cold, so it is also ideal for taking it as a lunch in the office. How to make zucchini omelette roll
Wash and peel the courgettes, and cut them into julienne strips with the large hole part of the grater.
Beat the eggs with Parmesan, salt and pepper, then add the courgettes and mix
Pour the mixture into a mold lined with parchment paper, level the surface of the mixture well, then bake the omelette in the oven for about 20 minutes at 180 ° C.
Then take it out of the oven, roll it up with all the parchment paper and let it cool down.
Once cold, gently open the roll and stuff it with cheese and ham
Spread the stracchino over the entire surface, then cover the cheese with the slices of ham.
Roll up the omelette again,
then wrap the roll in parchment paper and place it in the fridge for at least 1 hour.
Finally, slice the omelette roll with courgettes and serve.
