Until last month I didn't even know that octopus ragù existed, but then talking to the girls who work with me it turned out that they both had tasted this dish at the restaurant and were impressed. My curiosity, as you know, is great so having said that, I bought an octopus and I made the ragù with it;) The recipe is very simple but hides a pitfall ... Cut the octopus into very small pieces it is really a break but after tasting the dish I can tell you that it was worth it, so if you are a fan of the genre, try the recipe and use a powerful food processor to cut the fish. How to make octopus ragout
Clean the octopus (follow the guide how to clean the octopus) then chop it with the help of a food processor or chop it with the help of a knife
Prepare a mince with carrot, celery and onion, then brown everything in a saucepan with the oil
Add the chopped octopus, add salt, blend with the white viono, mix and cook for a couple of minutes
Cover the octopus with the tomato puree, put a lid on the pan and cook the sauce over low heat for about 1 hour.
When the octopus sauce is ready, cook the pasta in abundant salted water, drain it al dente, season with the sauce obtained by adding fresh basil.
