How to make pumpkin meatballs
Start by reducing the pulp of the pumpkin into a puree (cooked in the oven or steamed) and add the parmesan, egg, breadcrumbs, salt and pepper, work the mixture and form balls, inside which you will insert a small piece of asiago to make them even tastier, then pass them in breadcrumbs and leave to harden in the fridge for 30 minutes. Then proceed with cooking, which can be done by frying them, or by baking them in the oven, if you want a light recipe, in both ways you will bring to the table some tasty pumpkin balls.
