How to make stringy potatoes
wash the potatoes, put them in a pan with cold water and cook for about 25 minutes: they must be almost cooked to perfection, but still a little behind cooking.
let them cool slightly, then peel them and cut them into slices.
While the potatoes are cooking, cut the mozzarella and place it in a colander to drain.
Grease a pan with a little oil, place half of the slices and then season with mozzarella, salt and pepper.
