How to make eggplant pizza
Clean, wash and slice the aubergines.
Put the slices obtained on a baking sheet lined with parchment paper, add a drizzle of oil and a little salt and bake in a preheated oven at 200 ° C for 15 minutes.
Once the aubergines have been grilled, arrange them slightly overlapping one another on a round baking tray lined with parchment paper.
Season the tomato pulp with salt, oil and marjoram.
Cover with the tomato pulp and the mozzarella cut into slices, then season with salt, oregano and a little oil.
Bake the eggplant pizza in a preheated oven at 180 ° C for about 20 minutes.
After cooking, remove the pizza from the oven, garnish with a leaf of fresh basil and serve immediately.
