Spatula fish rolls are the second experiment to use this new variety of fish that I have introduced in my diet. I prepared the "ammullicati" fish rolls, that is stuffed with breadcrumbs or something like that, a typical Sicilian preparation that involves the use of toasted bread to which I added olives, capers and pine nuts. The recipe was given to me by Carolina (the girl who works with me and who suggested I try this fish) and that's how her father prepares them (I only added thyme and marjoram), an excellent recipe I would say, the spatula fish cooked in this way is delicious! How to make spatula fish rolls
Brown a clove of garlic in a pan with the oil, now add the grated bread, herbs, capers and pine nuts
Cook until the breadcrumbs are browned, then put the mixture in a bowl and add the pecorino.
Now take the spatula fish fillets and cover them with the mixture obtained
Roll up like a roulade and blocked with a wooden stick
Place the spatula fish rolls in a baking dish covered with a drizzle of oil, cover the fish with the remaining breadcrumb mixture and bake at 180 ° in a preheated oven.
Cook the spatula fish rolls for 20 minutes, then serve
