Risotto recipe with cream of mushrooms and hazelnuts of 26-10-2019
The risotto with cream of mushrooms and hazelnuts it is a dish with an unusual but very successful combination. If risotto in general is one of those dishes that everyone always agrees and risotto with mushrooms is a classic of the autumn period, the addition of hazelnuts gives it a burst of novelty and originality, without however distorting the characteristic flavor risotto. How to make risotto with mushroom and hazelnut cream
First clean the mushrooms and cut them into slices.
Then let them dry in a pan with a drop of oil and a pinch of salt, it will only take a few minutes.
Add half of the chopped hazelnuts to the mushrooms, cook briefly, set aside a little for decoration and blend the rest until you get a thick cream.
In a saucepan, brown the shallot with a little oil together with the second half of the hazelnuts.
Add the rice and toast it with the hazelnuts, then blend with the wine.
Then start cooking with the broth, adding it little by little and stirring very often.
When it is almost cooked, add the mushroom cream and finish cooking.
Finally, stir in the parmesan.
The risotto with mushroom and hazelnut cream is ready, decorate with mushrooms and chives and serve.
