Lemon meltaways cookies are typical English lemon cookies that are prepared during the holiday season. For the preparation of these lemon biscuits, eggs are not required due to the predominant presence of butter. Needless to say, they disappeared in a flash since they are biscuits so delicate and crumbly that one leads to another;) The original recipe included two versions to cover these biscuits ... one was to cover the lemon meltaways with a frosting cream with lemon but tasted so naked they were already very good and so I opted for the second option, to roll them only in icing sugar ... really delicious!
Despite being Christmas cookies, I find them perfect for this period.
How to make lemon meltaways
In a bowl, work the butter with the sugar, the grated zest of the lemons, the lemon juice, and a pinch of salt.
Work until you get a cream, then add the flour with the cornstarch and vanillin and mix all the ingredients.
Knead until a homogeneous dough is obtained.
Now form sausages of about 3 cm in diameter with the dough, cover them with plastic wrap and refrigerate for a couple of hours or until the cylinders of dough are completely hardened.
After the time in the fridge, cut the lemon biscuits to a thickness of about 1 cm.
Arrange the lemon meltaways on a baking sheet covered with parchment paper and bake at 180 °.
Cook the lemon meltaways for about 10 minutes.
Once cooled, roll the lemon meltaways biscuits in icing sugar and serve.
