How to make meat medallions with mushrooms
In a bowl, arrange the minced meat with the eggs, the Parmesan, the marjoram, salt and pepper
Mix everything until it forms a homogeneous mixture
Spread the meat on a surface covered with parchment paper until it forms a not too thin sheet
With a pasta cutter cut circles of meat
In each circle, create a hollow with slightly raised edges and put the medallions in the fridge for half an hour
In the meantime, clean the mushrooms, cut them into slices and cook them in a pan with a drizzle of oil and a clove of garlic, then cut the smoked cheese into slices.
Put the mushrooms in the hollow you made in the meat circles
Cook the meat in a pan with a little oil, covering the pot with a lid.
After 15 minutes, add the scamorza cheese, turn off the heat and leave it with a lid for another 5 minutes or until the scamorza has melted.
Serve the meat medallions with mushrooms and smoked cheese
