The roast with apples is a second dish with a very particular flavor, the meat, in this case a piece of pork loin, after being browned, is cooked in a saucepan together with the apples which at the end of cooking are reduced to a delicious cream. with which to season the meat that will be very tender. The roast with apples is a classic preparation to prepare during the holidays or to serve on some special occasion and will surprise everyone, even the most skeptical :) In my house, these types of dishes with fruit have never been prepared, and I think which are not part of the culinary culture of most families in southern Italy, in fact I met a bit of resistance when I proposed to my mother to prepare it for dinner last Thursday; once the initial prejudices were demolished, my roast was brushed in no time do not tell and we have noted it among the dishes to be prepared during the Christmas holidays. How to roast apples
Wrap the piece of pork loin with kitchen twine and stick a sprig of rosemary on it
Massage the piece of meat with a marinade of oil, wine, salt and pepper and leave to rest in the fridge for 1 hour.
Slice the onion and brown it in a saucepan with the oil
Add the pork loin and brown over high heat on all sides then deglaze with the white wine
Meanwhile, peel the apples and cut them into chunks
Add the apples to the casserole with the pork loin, pour the boiling broth, put the lid on and cook over medium / low heat for about 40 minutes.
Turn the piece of meat halfway through cooking and season with salt and pepper.
When cooked, lift the roast, place it on a cutting board, remove the string and slice it
Now mash the apples with the tines of a fork, and reduce the cooking juices
Then pour the apple puree over the roast and serve
