Grilled courgettes are a fresh and light side dish, a must of the summer season and, together with grilled aubergines, they are omnipresent in my house.
They can be served both as an appetizer and as a side dish and go well with all courses, especially fish dishes and we can also use them as a base to make other dishes, such as rolls or a nice parmigiana. I leave you to the recipe and we will read in a while with another proposal with ethnic notes;)


How to make grilled zucchini

Wash and peel the courgettes, then cut them lengthwise into slices about half a centimeter thick.

Heat a grill or plate on the stove, then place the courgettes on top and cook them for about 5 minutes on each side.

In a bowl, prepare an emulsion by mixing the aromas with oil and vinegar.

As they are ready, arrange the zucchini on a plate, greasing them with part of the marinade.

The grilled courgettes are ready: season with the remaining emulsion, then let them rest for 1-2 hours before serving to get even more flavor.
