These soft coconut treats are a sight because they are good and super quick to make. My friend Flavia, since I gave her the recipe, makes them every day, now she has become an addicted coconut sweets;) Coconut biscuits are always welcome in my house because we love coconut and then, given the simplicity and the speed of the preparation of the recipe .. it's really worth trying them, what do you think?
How to make coconut treats
In a bowl, whisk the eggs with the sugar.
Add the 00 flour to the beaten egg, then add the coconut flour a little at a time.
(Coconut flour is on the market in more or less fine forms, which absorb liquids in different ways: put it a little at a time in order to evaluate how much to add. If the dough seems very liquid, add a few tablespoons of extra coconut.)
Then make balls and place them on a baking sheet lined with parchment paper, spaced from each other.
Bake the coconut biscuits for 10 minutes at 140 ° C in a preheated oven.
Once out of the oven, allow the coconut sweets to cool and serve them in parchment paper cups.
