Cut the pork into pieces and remove the fatty parts.
In a non-stick pan, melt the butter then add the meat and brown it for a couple of minutes, then continue cooking over medium heat for about ten minutes
Now put the meat, raw ham, parmesan, salt, pepper and nutmeg in a blender
Chop everything then add the egg and mix all the ingredients well.
Meanwhile, prepare the pasta.
Place the flour in a bowl or on a surface with the eggs in the center
With your fingertips, mix the flour with the eggs, gradually absorbing the flour from the edges.
Knead for a long time until you get a smooth and elastic dough.
Alternatively, you can use a mixer like I did.
Shape into a ball and let it rest for 15 minutes well covered.
Take back the dough, put it back on the pastry board and cut it into 2/3 pieces
Flatten a piece of dough at a time with a rolling pin, then pass it into the pasta machine by putting the roller set in the widest thickness.
Once passed, fold it in half and pass it again by setting the roller in the thinnest thickness
Place the sheets obtained on a surface alternating with a little flour between one sheet and the other
Put the dough thus obtained on the pastry board and cut it with a knife into squares of about 3 centimeters on each side.
Put a little filling in the center of each square
Wet your fingertips and then close each square first in a triangle, then take a turn by rolling and finally sealed closing in a tortellino (the image is more explanatory).
Prepare in this way all the tortellini that you will gradually put on a floured plate
Then cook the tortellini in broth of meat for about 15/18 minutes and served with plenty of Parmesan
