The German potato salad, or Kartoffelsalat, is a tasty and a bit particular salad, in some ways perhaps more similar to the Swedish one that my aunt Anna makes, than to our classic potato salad that is prepared at my house, but definitely worth trying. potatoes is a typical dish of Bavaria, I had a feast in Munich last year, but also typical of Trentino and in fact it is during a holiday with my parents in Castelrotto that I tasted it for the first time. I didn't like it at the time, but luckily tastes change;)
Perfect to accompany both meat and fish dishes, this side dish will win you over with its rich taste.

How to make German potato salad
Prepare the broth and keep it warm.
Wash the potatoes, then boil them (with the peel) in lightly salted water for about 30-40 minutes (check the cooking with the prongs of a fork). Drain, peel and cut into slices about 1-2 cm thick.
Clean the onion and chop coarsely. Put it in a large bowl with parsley, chives, oil, vinegar, mustard, salt and pepper and mix by adding the hot broth.
Add the marinade to the potatoes and mix gently, then leave to cool in the fridge for about 1 hour.
Your German potato salad is ready!
