Watermelon cupcakes recipe of 20-07-2020
The watermelon cupcakes they are nice and delicious sweets, absolutely perfect to serve for a summer evening with friends. The recipe is pretty simple, the only annoying thing is waiting for the cupcake bases to cool so that when you decorate them, the cream doesn't melt. Despite the name and appearance, in this recipe there is no watermelon, but the colors recall the main fruit of summer.
If you want, however, you can replace the milk with watermelon juice even if, you will still have to use food coloring to get the cakes of a nice bright red color: in case, let me know how they come, of course;)
How to make watermelon cupcakes
Start by preparing the cakes: work the eggs with the sugar, then add the milk and oil first, then all the dry ingredients (flour, yeast and salt), finally add the red coloring and chocolate chips.
Pour the mixture into the cups, filling them about 2/3, and bake for 15-20 minutes in a static oven preheated to 180 ° C, then take out of the oven and let it cool completely.
When the cakes are ready, prepare the frosting: whip the cream very cold from the fridge, then add the green coloring and mix gently, so as not to disassemble the cream.
Put the cream in a pastry bag with a star spout and decorate the cupcakes by adding a few drops of chocolate.
The watermelon cupcakes are ready, serve them immediately or keep them in the fridge until ready to serve.
