Amaretto ice cream recipe from of 28-07-2008 [Updated on 16-04-2018]
Since my kitchen is not yet operational, on Friday evening I took advantage of Mom's kitchen to make a pizza and to prepare an ice cream. Actually I wanted to prepare a semifreddo or an ice cream cake, but I was without my cookbooks and without a proven recipe I had to improvise. I made the ice cream with a box of macaroons that I found at home and the result was really delicious.
How to make amaretto ice cream
Whip the egg yolks with the sugar in a bowl.
Beat the egg whites until stiff together with a sachet of vanillin, whip the cream separately.
Incorporate the whipped egg whites and cream and mix gently with the cream.
Crumble the amaretti and add them to the ice cream together with a spoonful of amaretto di saronno.
Mix everything gently, then place the ice cream in the freezer.
After about an hour, take the ice cream back and mix it, then place it in the freezer for at least 3 hours before serving.
Serve the amaretto ice cream in ice cream cups with small amaretti as decoration (I didn't have them and I placed a large amaretto in them).
