I'm not done with the salads, on the contrary, I have another nice string to offer you, but this morning let's start with the couscous and chickpea salad, easy, quick and tasty! Salad legumes are becoming a new passion of mine, as well as being very healthy and energetic they are so versatile that they can really be prepared in all sauces and in fact I still have other recipes like this to post;) Now I greet you and if I have time later I'll post another quick recipe with almonds that you can prepare this afternoon, kisses to those who pass by
How to make couscous and chickpeas salad
Cook the chickpeas in plenty of water and cook for 1 hour, alternatively use the already boiled chickpeas.
Put a glass of couscous in a bowl together with a glass of warm water, 3 tablespoons of oil and 2 tablespoons of lemon juice, salt and pepper.
Stir until the liquid is completely absorbed, then with a fork shell the couscous grains.
Add the aromatic herbs and chopped tomatoes.
Add the chickpeas to the couscous and mix.
Refrigerate for an hour then serve.
